Bob's Red Mill Gluten Free Arrowroot Starch Flour is an easily digested starch extracted from the roots of the arrowroot plant, Maranta arundinacea. The starch is used as a thickener in many foods such as puddings and sauces, and is also used in cookies and other baked goods. The arrowroot plant is native to the tropics of South America. It has a long history of cultivation by native peoples, who developed an extensive treatment process for extracting the usable powder from the roots. The roots are washed, scraped, beaten, soaked, pulped, and finally forced through a sieve. The liquid and fine powders that make it through the sieve are dried, leaving the useful arrowroot powder behind.
When Europeans first encountered arrowroot, the Arawak Indians informed them that it was called aru-aru, “meal of meals.” The Indians placed a high value on the root as a food, and the Europeans duly brought it back with them along with numerous other unusual plants and animals. Arrowroot was also used medicinally, with some Indians believing that it should be placed on wounds made with poisoned arrows to draw out the toxins. Also, because of its digestibility, the starch was used medicinally in Victorian times to wean infants from mother’s milk and nourish those with dietary restrictions.
Arrowroot starch does not turn sauces cloudy, and it works at temperatures below a simmer. There is a secret to a smooth sauce with arrowroot starch. Bring the sauce base to a simmer over medium-low heat. Next, whisk ¼ cup water and 2 Tbsp. arrowroot starch together to make a slurry. Stir the slurry into the simmering sauce and heat for one minute or until thickened. Arrowroot starch is also gluten free. It’s an excellent substitute for cornstarch and flour as a thickening agent in sauces, gravies, pie fillings, and puddings. Arrowroot starch is neutral tasting and tolerates acidic ingredients, such as citrus. The starch also freezes well and dissolves well at lower temperatures. In fact, it must be cooked over low heat as it doesn’t endure high temperature cooking and does not reheat well. Also, arrowroot does not do well in milk-based cream sauces (it changes the texture), but bakes well in cakes, cookies and biscuits made with milk.

- 4 Tbsp Cream of Tartar
- 4 Tbsp Arrowroot Starch
- 2 Tbsp Baking Soda
1. Put a flour sifter in or over a bowl and place the ingredients in the sifter, in the exact order given.
2. After all of the ingredients are in the sifter, sift them into the bowl. Re-sift them into another bowl, and continue until you have sifted them 4-5 times and they are thoroughly mixed.
3. Place the baking powder in a clean, dry glass jar with a metal lid and store in a cool, dry cupboard. Make sure the jar is tightly closed! Prolonged exposure to air can spoil the effectiveness of the powder. Use within 3 months.

Can the baking mixes be made with dairy and egg alternatives?
Yes. All of the baking mixes can be prepared with egg or milk alternatives. For any recipe calling for milk, you can use a replacement "milk" made from soy, rice, almond, or hemp. However, soymilk works best. To replace butter, use a non-hydrogenated margarine, shortening, or soy margarine because using a regular oil may not work. To replace buttermilk, simply add 1 teaspoon lemon juice or cider vinegar per one cup of milk replacement. Stir and let it stand a minute before adding to your recipe. If a recipe calls for milk powder, you can use a non-dairy milk equivalent in powdered form, such as soy powders or powder alternatives made from potato. If the recipe calls for less than 2 tablespoons of milk powder, you can simply omit the ingredient. How Bob's Red Mill Began
Bob's journey began serendipitously in the mid '60s after coming across a book about old stone- grinding flour mills. His enthusiasm was immediate and he decided to find usable stone mills, which were becoming rarer due to the domination of high-speed steel roller mills. His persistence paid off. Equipped with several sets of millstones from an old North Carolina water-powered flour mill, Bob and his wife ,Charlee, began their first mill in Redding, California.
In 1978 they moved to Oregon City, Oregon, and on an afternoon walk, Bob came across an old mill that, as luck would have it, had a big sign out front reading “for sale”. In just a few short months, he was able to source a beautiful old mill that could stone grind flours and cereals for local customers. Word quickly spread and Bob's Oregon City based mill enjoyed much success until 1988 when a fire destroyed the building.
Never one to back away from a challenge, Bob knew he owed it to his family of employees and loyal customers to build the business again from scratch. Rising to the challenge, he spent many years growing the business to where they are today.
