Pamela's Products Pizza Crust Mix Gluten Free creates a flavorful, crispy crust whether baked in an oven, on a pizza stone, or in a brick oven with high fire heat; all with only oil, yeast and water; no eggs needed!  Make a thin crust, thick crust or deep dish, or experiment to make Focaccia, dinner rolls and believe it or not, great flour tortillas.  It's easier than you think!  Finally a pizza crust that you can enjoy with simple toppings because the taste of the crust alone is that good!

How should I store the baking mix once I open the bag?
They recommend storage in an air tight container, like a zippered bag, plastic food container, or fold down the top of the mix bag and seal with a clip.

What does the "K" on your baking mixes stand for?
The "K" designates that their products are under Kosher supervision.

Why do they have "non-dairy" on the package, but in the ingredients it states it may contain traces of dairy?
Products designated as "non-dairy" have no dairy ingredients, but products that do contain dairy are produced on the same machinery. They cannot guarantee that their products are completely free of any trace of dairy.

Do they test for gluten?
Yes, their products consistently test at less than 10 ppm for gluten.

Are their products non-GMO?
At present, they are in the process of joining the non-GMO Project to certify their products as free of GMOs. They will apply the non-GMO Project logo to their packaging as they become certified in the following year.

Pamela’s Products has been in the Natural Foods Industry for 25 years and have always used quality non-GMO ingredients. They have statements from all their suppliers that to the best of their knowledge, their raw ingredient is free of GMOs. In addition, they randomly perform 3rd party testing on their products to ensure they are GMO-free.

Why is there a nut warning on the baking mixes?
While tree nuts are present in the facility, every precaution is taken to ensure there is no cross contamination (to include special nut processing days, cleaning the equipment and storing allergens away from other ingredients). Our allergen page will indicate if a product is nut free.

Why does the package say non-dairy if it has eggs in it?
Dairy products are generally defined as food produced from milk and eggs do not fit this classification.

How should I store the baking mix once I open the bag?
Store the unopened bags in an airtight container to help preserve the mix – simply plop the entire bag into the container, recipes and all. From there you can freeze it, store in the refrigerator or in a cool dry place.

Is their packaging recyclable?
You can recycle the packages if you can find a facility in your area that accepts them. The material was chosen for its ability to protect their mixes for up to a year. Pamela’s concern is first and foremost for their customers to receive a quality product that performs as it should through the expiration date. Unfortunately, this limits the facilities that will accept this material. Until they are able to find a better solution that will protect their product for 12 months (as required by their distributors and retailers and is an added benefit to their customers) their customers will have to continue to inquire with their local facilities about recycling. They are sorry for the inconvenience.

Pamela's Pizza Crust

1 bag Pamela's Pizza Crust Mix
2-1/4 tsp or 7grams active dry yeast
1 cup plus 2 TBSP very warm water (110° optimum)
2 TBSP olive oil
Use rice flour and/or corn meal for dusting

Yield: two 10 inch pizza crusts

Mixing:  Using a stand mixer with paddle attachment or mixing by hand, combine dry mix, yeast, water and oil.  Mix on mediumfor 15 to 30 seconds until dough is completely combined. Dough will look sticky.  Scrape down dough in bowl into a ball, lightly oil the top, cover with plastic wrap and let rise for 1 to 2 hours, or until doubled (or dough can rise in refrigerator overnight and be baked the next day after warming to room temperature).

Forming: Pizza dough needs gentle handling.  Dust parchment paper or pizza feel with rice flour (use cornmeal if desired; cornmeal adds flavor and texture to the crust).  Scoop out 1/2 dough for one 10" pizza crust.  Use oiled fingers or lightly dust pizza dough with rice flour, and gently pat crust.  For very thin crust, roll or pat out using second sheet of parchment on top of dough.  Dough can sit and rise or bake immediately.

Baking: Place rack in top third of oven and pre-heat oven to 475°; can also pre-heat a pizza stone.  Place parchment with dough on cookie sheet, pizza stone, or directly on oven rack.  Par-bake crust for 8 to 10 minutes until hint of brown, longer for thicker crusts.  Option: wrap and freeze par-baked crusts for later use.

Toppings: Pre-cook any meats or vegetables that require cooking as topping will only be warmed through in final bake.  After par-baking pizza crust, cover with sauce and toppings and return to oven to bake an additional 5 to 10 minutes until hot and bubbly.

Deep Dish Pizza: Light oil heavy duty 9 inch round pan.  After dough rises, spread in pan about 1/2 inch in center, leaving a thicker edge going up the side of pan.  Pre-heat oven to 425°.  Par-bake dough for 15 minutes; remove from oven.  Top crust first with cheese, then toppings, and finally add sauce.  Bake for 10 more minutes.  Remove from oven and top with parmesan cheese; bake for final 10 minutes, for a total of 35 minutes.

About Pamela's Products

When we think of bakeries we dream of the delicious treats of childhood, of cakes and frosting, cookies and pies but for me it was awful tasting allergy cookies and heavy whole grain breads. My grandparents started one of the first health food stores (and bakery) in San Francisco. Growing up in the Health Food Industry, I was given the “weird” food to take to school by way of heavy, nutty breads and small, dry health food cookies or with carob instead of chocolate. No one wanted to trade food with me! I spent my summers in my family’s bakery, packing rice and soy cookies for people with special dietary needs. Although these dry, tasteless cookies were in high demand, they were not particularly appetizing. At a young age, I could relate to those who had to eat these “weird” foods. I imagined life with food allergies and without the joys a great chocolate chip cookie. I pondered my own enjoyment of cookies and food and contemplated what life would be like if all I could eat were the rice and soy cookies I packed everyday.
