How Tanka Bar came to be
When Tanka started working on their recipe, they were trying to meld authentic Native ingredients and flavors into a bar that would honor their past, yet fit how they live today. They started with the traditional recipe for wasna, the original Native trail mix, and thought to modernize it. They tried all sorts of ideas to improve on wasna, but each time they added something to the mix, they went further away from what they intended. It could not be improved! They came full circle to see that the traditional flavors were perfect. The Tanka Bar is simply great.

Buffalo good for the Earth and your Heart
Buffalo is a heart-healthy, nutrient-dense, lean protein that contains mono and polyunsaturated fat, as well as Omega-3 fatty acids. Buffalo is naturally low in sodium, cholesterol, and saturated fat. It is high in Vitamin B6, B12, selenium, phosphorus, zinc, copper, potassium, riboflavin and niacin.
All Tanka products are made from 100 percent all-natural Buffalo. They are gluten-free, contain no nitrates, hormones or MSG. Our Tanka Dogs are also a good source of iron and calcium. The American Heart Association recommends buffalo meat for a heart-healthy diet because of its low fat and cholesterol content.
Filling a void
Over the past several years, there has been an emergence of buffalo-based products throughout restaurants, cafes and local meat markets. In spite of the recent surge of buffalo products, such as burgers, jerky and steaks, the market still lacks a nutritionally balanced, great-tasting, 100 percent buffalo hot dog. The Tanka Dog fills this void and stands at the top of the category because of its incredible taste and outstanding nutritional profile.
In accordance with the Mediterranean diet and the Zone diet, and several recent studies of chronic disease, such as diabetes, it has been recommended to consume a balance of mono and poly-unsaturated fat, termed by physicians as "good fat" (containing a greater ratio of HDL than LDL) on a daily basis. Is there BPA in Tanka packaging?
There is no Bisphenol A (BPA) in Tanka packaging, nor is there a known impurity in any of the components in the laminated packaging materials including all nylon, polyester, polypropylene and polyethylene films, as well as inks and solventless adhesives.
Are there nightshades in Tanka products?
Traditional-flavored Tanka Wild Sticks contain an ingredient that might be considered a nightshade vegetable, ground red pepper. However, each Tanka Wild Stick would contain .0569 or less than 1 percent of this ingredient. Tanka Bar Traditional contains .021 or less than 1/4 of 1 percent of ground red pepper. Also, Tanka Bar Spicy and our Tanka Wild Spicy products contain jalapeno and habanero.
What is your lactic acid starter culture?
The lactic acid starter culture used in Tanka products is 100% plant-based. Their starter culture is primarily made from celery juice and citrus juice, and it helps create the natural preservative that keeps Tanka products from spoiling. Because Tanka products are all-natural, they do not use common preservatives like added nitrites and MSG. Instead, the acid from the fruit helps preserve the meat. In addition, they also use lactic acid starter culture to help kick-start the preservation process. Their lactic acid starter culture is not made from dairy sources and is therefore safe for people with milk allergies.
Do Tanka products have preservatives?
Tanka products are preserved naturally using savory herbs and spices and other natural ingredients. There are no added nitrites to any Tanka product.
Is buffalo meat really that healthy?
Buffalo has less fat, calories and cholesterol per ounce than even skinless chicken.
Are Tanka buffalo grass fed?
They currently buy their buffalo from a variety of sources. Their goal is to buy 100% Native American grass-fed buffalo raised following the wild model. This means that the buffalo are born and raised in large open prairies eating natural grass from prairie land that has never been tilled or planted. Animals are rotated to simulate the natural migration of buffalo as much as possible. This helps them to eat the different grasses during different grazing sessions, similar to how they have grazed throughout history. The ability to follow a wild management model is limited by modern fences and a limited land base. Since the Tanka Bar is a blended product, they blend 10/90 lean meat from animals 2 to 3 years old with that of meat from older animals 5 to 6 years old. These are either bulls or females that are no longer producing offspring. They are working toward having 100% grass-fed meat, meaning that the animals were never given corn or blended feed. Even during the staging process, they want them to be fed hay or feed cake made of 100% natural grasses. They presently use about 75% grass-fed meat in Tanka products, which means we have not yet achieved our goal of 100% grass-fed.
How should I store Tanka products?
Unopened Tanka Bars and Tanka Bites, Traditional and Spicy flavors, can be stored in a cool, dry place and not in direct sunlight for up to one year. After opening, they must be refrigerated.
What's the difference between buffalo and bison?
Bison is the proper name for the largest mammal in North America, commonly known as the American Buffalo. A completely unrelated mammal, the Cape buffalo or the water buffalo, is found only in Africa and southeast Asia.
Are bison an endangered species?
No, not now. Today there are in excess of 400,000 bison in the herds of North America.
Are Tanka products gluten free?
Yes, their products and their manufacturing facilities are certified Gluten Free by the Gluten Intolerance Group. Their products are tested by a third party accredited laboratory and test below the minimum detectible quantity of 10 parts per million. One part per million is equal to one milligram of gluten per kilogram of sample product.
What is 'fatting out'?
Because Tanka's product are 100% natural and they use a natural starter culture to inhibit the growth of pathogens in their product, they do not have a large amount of potassium or other minerals that help hold in the fat. The little white specs that may sometimes show up on your bar are a small amount of the fat coming to the surface. Do not be alarmed, it is 100% edible and natural in spite of its puzzling appearance. This is not mold.
