    La Tourangelle Roasted Walnut Oil is distinctive, flavorful and all-natural.  La Tourangelle handcrafts this roasted walnut oil in Woodland, California strictly following the 150-year-old traditional methods of its French sister oil mill.  Slowly roasted to perfection, expeller-pressed and lightly filtered, La Tourangelle Roasted Walnut Oil adds a rich walnut taste to salad dressing, pasta, grilled meat or fish, baked pastries, and is perfect to dip with bread.

    Health Benefits
    La Tourangelle Roasted Walnut Oil is a rich source of omega 3 (1.4g per 1 Tbs.), which can help to prevent cardiovascular disease while acting as a counterweight to bad cholesterol. Since the oil is not refined, it also has a very high level of natural antioxidants. Walnut oil contains 72% polyunsaturated fat by content: 60% linolenic acid and 12% alpha-linolenic acid.

    Production Process
    La Tourangelle is the first oil mill in California to produce walnut oil using traditional French methods. After harvesting, the nuts are washed, sorted, sun-dried for several days and stored for further drying. The walnut kernels are then ground and roasted in cast-iron kettles. The resulting warm paste is pressed in a hydraulic press. Following mechanical extraction, the oil is lightly filtered and bottled. Walnut oil is extracted from English walnuts only.

    Usage
    Walnut oil is a delicious and easy-to-use oil. In salads, walnut oil mixes very well with balsamic vinegar or red wine vinegar to create a simple but flavorful vinaigrette. Also try it with tarragon white vinegar. It is also delicious on grilled fish or meat: A dab of walnut oil is the perfect touch for enhancing flavors and easing digestion when added towards the end of your beef bourguignon or meat dishes. You can also try it in pasta with cheese. Don't hesitate to use it in cakes and baked goods, particularly with apples or pears.

    What is the difference between Roasted Nut Oils and Refined Nut Oils?

    La Tourangelle Roasted Nut Oils are handcrafted in their Artisan oil mill and should not be confused with refined nut oils.

    How La Tourangelle roasted nut oils are produced:
    La Tourangelle roasted nut oils are made from the best quality nuts available. For instance most of the walnuts they use come from the orchard located next to the oil mill. They buy the crop and sundry the walnuts in the traditional way. Each batch of nut oil is unique and handcrafted following a 150 year tradition. First the nuts are hand roasted in cast iron kettles before being expeller-pressed. The oil is then lightly filtered and bottled. Their roasted nut oils are very flavorful with rich colors and more natural antioxidants than refined nut oils because many are removed during the refining process.

    The best way to compare is of course to taste the difference, which is often likened to the relationship between refined olive oil and extra virgin olive oil.

    How refined nut oils are produced:
    Refined nut oils including refined walnut oil and refined almond oil are made from what is called nut oil stock. Nut oil stocks are actually sub-standard nuts sold at discounted price by California nuts growers to oil manufacturers. The nuts are then expeller-pressed in a screw press and thereafter refined to clean impurities. The result is 100% pure nut oil but with no flavor, no color and no smell.     Excellent oil for baking. Smells wonderful but not overpowering. Very reasonable price for quality. I was concerned about packaging but I believe the can is stainless steel. I haven''t noticed any metallic flavor. Thanks Lucky Vitamin for carrying so many great products!
