This is real wheat, the way it was meant to be. Crafted in Italy by expert pasta artisans, who only enhance the inherent goodness of this most ancient grain. Einkorn means “one grain” in German. That’s because einkorn only has one grain attached to the stem, while other wheats have groups of four grains. It grew wild for millions of years before that. Just a few years ago, einkorn was close to extinction. Einkorn was abandoned 5,000 years ago, because it is difficult to harvest and mill, and has one fifth the yields of modern wheat. It is the oldest food to make its way back to your table. Jovial Foods worked in Italy with a group of researchers who were replenishing original seeds. They started planting just 50 acres in 2009 and now they are the largest growers of einkorn in the world.
Einkorn has more protein than any other grain. It is packed with more nutrients, vitamins, and dietary minerals than regular wheat. Einkorn has 40% more protein and 15% less starch than commercial wheat, plus abundant B Vitamins and trace minerals like iron.

Meet Carla and Rodolfo
Jovial Foods, Inc. was founded by a husband and wife team who has always been passionate about food, farming and traditions. Carla and Rodolfo met in the 1980’s in Bologna, where she was spending a year abroad studying Italian and he was studying agriculture. Both were born into family of talented home cooks, he in Italy and she in New England, and food was at the center of their childhoods.
A Child’s Gluten Sensitivity Inspires A Search For Healthier Foods
Carla and Rodolfo discovered that their young daughter’s asthma, stomach disturbances, mood swings, chronic sinusitis and excessive hair loss was caused by her body’s sensitivity to modern wheat. They both were professionals in the organic food industry, but they realized they needed to go beyond organic. Their focus shifted to creating high-quality gluten free foods for their family. They were not only looking for great tasting, gluten free foods processed without allergens, they also wanted their daughter’s food to be made with the best certified organic ingredients.
Discovering Einkorn, The Most Ancient Grain
Carla and Rodolfo soon suspected that changes in wheat and other varieties of plants over the years were contributing to the increasing number of children with food intolerances. Looking to the past for answers, they discovered a nearly extinct ancient grain called einkorn, nature’s original wheat. Einkorn was the first crop farmers grew some 10,000 years ago. It is incredibly nutritious, flavorful and genetically pure. In einkorn, Carla and Rodolfo found a wheat their daughter could flourish with. They realized they had to bring einkorn back to help other families.

Jovial is all about family, feeling good, celebrating life, and showing love with good food. After years of worrying about food allergies, Carla and Rodolfo’s family finally found a way to eat well and feel happy again. That inspired their company’s name, jovial. Carla and Rodolfo continue to work on new products, like freshly harvested tomatoes packed in glass jars, because they don’t want to worry about harmful chemicals like BPA, and neither should you.
