Forbidden Rice has the darkest bran layer of any whole grain rice. It is this bran layer where most of the minerals, vitamins and fiber are stored. Forbidden Rice contains a class of antioxidants called anthocyanin's. For such a dark whole grain rice, it is extremely convenient, cooking in only 30 minutes and producing a roasted nutty taste with a hint of fruit or floral at the finish.
How Should Lotus Foods Rice Be Stored?
Lotus Foods’ Rice should be stored in cool and dry conditions. Their rice is warehoused in 55-60 degree temperatures. If you are not going to use the rice for long periods of time, rice can be kept in the refrigerator and can even be frozen.

Why Are There Different Colors of Rice and What Do These Differences Mean?
All rice starts as a whole grain, which means that the germ and bran layer are intact. When these are removed, you have white rice. The most common bran layer for rice is brown. But there are also red and black rices. Some rices are only partially milled, so some of the bran layer is left on. These rices tend to be light tan, pink or even a striated color.

Lotus Foods love story began when they first tasted an amazing black rice during their travels in China. It was called “tribute rice”, or “longevity rice” because it was reserved for Chinese Emperors to ensure their good health and long life. That story, then became the Lotus Foods story. In 1995, they began importing black rice, calling it Forbidden Rice after the Forbidden City, the Chinese Imperial palace. Since then their goals have been high, but they’re proud to say Lotus Foods has stayed true to them along the way.

In 2008 Lotus Foods committed to partnering with small-scale farmers who radically changed how they grow rice, using less to produce more. With a set of practices that they call More Crop Per Drop farmers can double and even triple their yields using up to 50% less water on average and 80-90% less seed.
