Eden Organic Hojicha Chai Roasted Green Tea with Spices

EDEN Organic Hojicha Chai is made from larger, coarser new green tea leaves of Summer that have begun to lose their caffeine strength. The leaves are immediately steamed, rubbed, and partially dried, just as they are for green tea. Before the leaves are completely dried though, they are placed in gas fired rotating iron ovens to be slowly roasted and then cooled. Roasting the leaves gives it a deep well rounded flavor similar to that of English black tea, but lower in caffeine than black or other green teas. Hojicha contains 67 percent less caffeine than brewed coffee. Finally, the hojicha is expertly blended with a special selection of organically grown, stimulating spices: cinnamon bark from Indonesia/Viet Nam, cardamom seeds from Guatemala, ginger root from India/Tanzania, Chinese star anise from Viet Nam, roasted chicory root from France, and cloves from Madagascar. EDEN Organic Hojicha Chai has been especially formulated by our master tea blender, experienced in the art of combining just the right spices and amount for a truly uplifting, stimulating tea. Our blender says, "Innovating, breathtaking, this audacious blend combines familiar malty notes of Hojicha with exotic Indian spices. A classic revisited." Only the finest organic ingredients are used.

Chai is the generic word for tea in many south Asian countries. It is the national drink of India, where true chai originated over 5,000 years ago. According to legend, chai was specially formulated for a king based on the principles of Ayurvedic medicine by the kings family doctor, the vaidya. The vaidya would formulate chai for each family member based on their physical and emotional conditions. These special formulations were made from a wide variety of spices and herbs. Every family had their own chai that was handed down generation to generation. In India today chai is served by vendors called 'wallahs' in virtually every train station, bus station, and public market. It is made over an open flame and served in plain clay cups. Always made with milk and traditionally with honey, but today honey has been replaced by refined sugar. We prefer Edensoy Vanilla, Extra Vanilla or EdenBlend for a nondairy version. For a sweeter flavor try organic maple syrup or organic honey.

Usually made with black tea, Eden's is made with Hojicha, roasted summer green tea leaves. Rich smoky, deep flavor similar to that of black, but with less caffeine - 67 percent less than brewed coffee. Traditional chai is made with milk and sugar or honey. Eden use's Edensoy Vanilla or Edensoy Vanilla Extra, sweetened with naturally malted organic grain extract, or EdenBlend naturally sweet from organic amazake. It's delicious plain as well. Spicy, warming, and stimulating.

Heat water to a rolling boil. Fill a cup and steep tea bag(s) for 4 plus minute and remove.

Edens Favorite:
In a saucepan, warm 2/3 cup of your favorite Organic Edensoy and 1/3 cup of water. Add one tea bag per cup. Reduce the flame to low and steep 5 to 7 minutes. Remove tea bag and sweeten with organic honey or organic maple syrup

For a glass of ice tea, brew as above. After steeping, cool and then pour into an ice filled glass. To make a pitcher of iced Chai, Eden recommends using 4 tea bags to 1 quart water for 6 servings.

About Eden Foods

Eden was founded in Ann Arbor, Michigan in 1968 by a group of friends who were trying to source good food. They were motivated by their studies of a worldwide phenomenon centered upon macrobiotics and its principles of whole grains, plant based protein, and locally grown food produced without toxic chemicals, etc. Because they couldn't find this kind of food in the grocery stores, they started the Eden Food co-op, placing $200 orders to Erewhon in Boston and Chico-San in California. They also began traveling rural roads to find farmers who were interested in organic farming methods. The Eden co-op became a natural food store offering whole grains and beans, soyfoods, sea vegetables, miso, cereals, vegetable oils, sesame butter, nut butters, and the like.
