There are black specs in the sugar pouch. What is that?
At Wholesome!, they care about providing their customers high quality, great–tasting sweeteners. That’s why their products are USDA Organic Certified and Non-GMO Project Verified. From time to time, you might find a hard, dark colored granule mixed in with your organic sugar. Don’t worry! Most often, this is a burnt piece of sugar or organic plant fibers inherent to the sugar. The artisanal nature of their sugar involves heating sugar cane juice or coconut nectar (in the case of coconut palm sugar) until it crystallizes. Occasionally, plant fibers might accidentally be cooked down in the process as well. They are harmless. It is similar to seeing a darker spot on baked or toasted artisan breads.

It all begins at Azucarera Paraguaya’s (AZPA) organic sugar cane farm in Paraguay. What does it mean that Wholesome! Organic Sugar is “green-cut?”
Green-cut refers to the fact that there is no burning of the fields taking place in the harvest of their fair trade organic sugar. Field burning is a common practice with conventional cane sugar harvesting. The burning is done to remove all the additional foliage and make the mechanical harvesting and subsequent cane crushing and sugar extraction more efficient. It eliminates the additional “plant trash” from the processing. Burning of cane fields is significantly detrimental to wildlife and the environment. Wholesome!'s fair trade organic sugar cane is almost exclusively hand-cut by the farmers. Additionally, they machete all of the foliage so it lies in the freshly harvested field acting as a natural barrier to weed growth.

Why does the granulation size seem to fluctuate on Wholesome! Natural & Organic Sugars?
Wholesome! Organic and Natural Sugars are artisanally produced from a first crystallization of sugar cane juice without the use of chemicals, bleaches or flocculents. For this reason, granulation cannot be specifically controlled and fluctuations, while rare, are possible.
What temperature is Wholesome! Organic Sugar processed to and for how long?
Wholesome! Organic Sugar is processed at a temperature around 320 F and the minimum time “cooking” would be about 4 hours.
Are Wholesome! sugars refined?
All Wholesome! sugar cane products are minimally processed (unrefined) directly from the sugar cane. The sugar cane is simply crushed to extract the juice. The juice is heated to evaporate the moisture and concentrate the sugar which is then crystallized and dried. This minimal physical, processing retains a significant proportion of the natural cane molasses in and around the crystal giving the product it’s unique color & flavor qualities.
Refined sugars are subjected to several further chemical processes to make pure white sugar (sucrose). Refined ‘Brown’ sugars are then made by ‘painting’ or coating the crystal in molasses or other dark colored syrups.
