What's Cold-Brew Coffee?
"Low and slow" is the key to Chameleon Cold-Brew's coffees. Using hot water is so 15th century! Cold-brewing results in a smooth, highly caffeinated and less acidic coffee. 12 hours is the standard, but they brew every batch of Chameleon Cold-Brew for at least 16 hours. Who wants "standard" coffee?
The components are simple, but all cold-brews are not created equal. A growing number of products pass as cold-brew coffee on the shelf but fall short of the head of the class. At Chameleon Cold-Brew, they don't believe in 'good enough' or doing anything on a pass/fail basis. They go to great lengths to ensure that every drop of their cold-brew coffee is the very best you'll ever taste. It's about accountability, to you and to their craft.
Chameleon Cold-Brew invests in quality. Their coffees are made with highly select blends of 100% certified organic, free trade Arabica beans and all-natural flavors. One roast doesn't fit all. They tailor-roast all their beans on-site, to maximize freshness, match specific flavor profiles and ensure consistency. It's all about purity and pH - and some other science you probably don't really care about. They use only pure Texas Hill Country water.
Coffee Made for Makers
Bold on buzz and easy on the stomach, Chameleon Cold-Brew does right by you every time and every way - milky or straight, icy or hot. And yes, there are times when customers have been known to add a shot. A simple cup transforms a dreamer into a do-er, and a planner becomes a creator. When we've all got the right coffee, we're making a world that's more vibrant, more giving and just plain better. So let's raise our Chameleons - Organic & CCB Trade True: Here's to the Makers of the world that make it better.
If you're a hippie or a hipster, a mechanic or a mom, Chameleon Cold-Brew is making the most out of your coffee. To get out there and get after it. Crush it. And make the most out of your day. Seems simple, but making it right takes passion, patience, and yes, lots of coffee.
They scour the world for the most bad-a** beans, and bring them back to their home in Austin, where small-batch air-roasting is an art form and no beans get burned. Their famous Hill Country water hangs slow & cold with the roast, bringing out flavors as big as Texas.
About Chameleon Cold-Brew
It was 2010 in Austin, Texas. Something was brewing. The time was right for a cold-brew coffee revolution. Chris Campbell and Steve Williams, neighbors and self-professed coffee geeks, were hell-bent on creating the best tasting coffee. BEST-TASTING EVER, that is.
The pair experimented for months with different formulas and brewing methods. They tried and tried (and tried), until they achieved the right blend of highly select, perfectly roasted Arabica beans (100% organic, of course), pure Hill Country water, and brewing time and temperature.
Then, one day, it happened. They produced the best coffee they'd ever tasted. It was the perfect batch of cold-brew coffee. Chameleon Cold-Brew coffee was born. Everyone who tasted it was knocked sideways. From its exceptionally smooth, rich flavor to its dramatically reduced acidity to the jitter-free punch of natural caffeine it provided, this coffee was something rare and special. Chameleon earned lots of fans, and those fans invented and shared all sorts of ways to make Chameleon Cold-Brew Coffee their very own.
More and more happy customers and buyers soon demanded more and more products and flavors. And, buyers soon demanded more and more products and flavors. They listened and began meticulously testing and tinkering once again. In 2012, Chameleon Cold-Brew introduced a series of flavored, multi-serving cold-brew coffee concentrates and followed with a companion series of single serving, ready-to-drink coffees in 2013. Chameleon Cold-Brew has grown over the years, but Chris and Steve and their uncompromising standards remain their foundation.
Just Plain Better
Sweet, smooth success starts at the source, so Chameleon Cold-Brew's Sourcing Standards are tough. It's what they're all about. Direct trade and good communication with the farmers is their first step toward a feel-good cup of coffee. They also keep their global search narrow - only organic, non-GMO beans can come home with them, where they get washed and air-roasted to perfection in small batches.
They're beyond excited that Chameleon can now be found in a growing number of natural grocers and larger retailers around the country. But they are forever proud of their roots in Austin, Texas. And they still stand behind every bottle.
The Chameleon Cold-Brew Coffee Obsession
For them, the path to the best cup of coffee involves a conscious approach to bean sourcing, inventive roasting, and meticulous brewing. When all three of these practices are done right and consistently, you end up with magic in a cup. The Chameleon Cold-Brew Coffee Obsession is Texas-sky-high, a combination of passion and compassion, of sense and science - their total must-haves for every batch of brew. It breaks down like this:
Chameleon Cold-Brew's beans are sourced consciously, grown sustainably, often times planted in shade to eliminate the need for chemical pesticides, and nurtured carefully - striving to use the very best practices for water conservation and waste reduction.
First, the Farm
They advocate for and engage in direct, ethical trade to protect farmers, proudly paying a premium price for beans and as a general rule, they choose to work with farmers who provide their workers with housing, a livable wage, and a reasonable work schedule.
Their beans are sourced consciously and grown sustainably, to eliminate the need for chemical pesticides. They only use organic, non-GMO beans that are washed to make sure they have vivid flavors.
They Have a System
They encourage their farmers to plant thoughtfully, using the latest, smartest ecological innovations. Some of their organic farmers grow their coffee in diverse ecosystems, along with organic fruits and vegetables. Each plant plays a role in protecting the other crops, eliminating the need for chemical pesticide and creating a sustainable ecosystem.
Inventive Roasting Method
A Roast Like No Other
Air roasting is the best, so that's all Chameleon Cold-Brew does. They use state of the art air-roasting machines using heated air currents that constantly move to gently coax maximum flavor out of the beans. The beans appreciate it so much, they're not as bitter! Beans roasted with heat in big drums, on the other hand, have it hard. And they taste like it.
Air roasting is not for novices, by the way. It gives the roasters a lot of control, and they use their considerable skills and craftsmanship to Chameleon-customize each roast to suit every individual batch of beans.
They roast only in small batches, because they can give each batch more attention and finesse them to perfection. You might be sensing a theme of perfectionism right about now.
Meticulous Brewing Practice
It all starts with highly mineralized water from the Texas Hill Country. You can only get that there, (in case that isn't obvious) making it one of their powerful secret weapons.
A Little Math
Don't worry, they did the hard work, you only need the answer. There's a perfect ratio for steeping the perfect cold brew, and they've found the sweet spot.
Back to the Grind
In the case of grind, size matters, and a little bigger is a lot better. Coarse grounds deliver the best, smoothest cup you've ever tasted. They small-batch grind using special equipment to deliver the same smooth flavor.
