Blueberry & Black Elderberry Breakfast Parfait Recipe

Serves: 2-3

INGREDIENTS:

For the parfait:

  • 2 cups plain, nonfat Greek yogurt
  • Berry compote, recipe follows
  • 1 cup granola (your choice!)
  • Mint for garnish (optional)

For the compote:

INSTRUCTIONS:

Make the compote: Combine all ingredients in a medium saucepan. Bring to a simmer over medium heat, and then continue cooking for about 10 minutes, stirring occasionally. Once mixture has thickened, remove from heat and let cool. Transfer to a jar or container and store in the fridge until ready to use!

Assemble the parfaits: Spoon some yogurt into the bottom of your serving glasses. Alternate layers of berry compote and granola with yogurt until glasses are filled. Finish with a sprig of mint. Serve and enjoy immediately!
