A good breakfast is filling and energizing. When done right, a breakfast parfait provides layers of deliciousness that are jam-packed with nutrition. Plus, it’s easy to make and take on the go!

Yogurt, fruit, and granola are the holy trinity of breakfast parfaits. But we’re kicking things up a notch with this blueberry and black elderberry breakfast parfait recipe. It transforms fresh blueberries into a silky compote that’s enhanced by black elderberry extract, lemon juice and honey.

Black elderberries are rich in flavonoids, which are naturally occurring antioxidants. In fact, black elderberries have twice the antioxidant capacity of blueberries (1). What’s so great about antioxidants? Well, they can help fight oxidative stress and, therefore, boost your defense against age-related health conditions (2).

Dark blue and deep purple fruits, like black elderberries and blueberries, contain a specific type of flavonoid called anthocyanin, which can help support your immune system (3).* You can take a black elderberry extract like Sambucol every day for continuous immune system support.*

The health-promoting benefits of this breakfast parfait don’t stop there. Blueberries are high in fiber and a good source of vitamins C and K. Yogurt is also packed with protein—one cup of plain, nonfat Greek yogurt contains about 20 grams! To make your parfait even more nutritious, you can choose a hearty granola made with ancient grains and super seeds, such as quinoa, amaranth, buckwheat, chia, flax or hemp.

The end result is a parfait that’s sure to please. Here’s how to make it:

Blueberry & Black Elderberry Breakfast Parfait Recipe

Serves: 2-3

For the parfait:

  • 2 cups plain, nonfat Greek yogurt
  • Berry compote, recipe follows
  • 1 cup granola (your choice!)
  • Mint for garnish (optional)

For the compote:

Make the compote: Combine all ingredients in a medium saucepan. Bring to a simmer over medium heat, and then continue cooking for about 10 minutes, stirring occasionally. Once mixture has thickened, remove from heat and let cool. Transfer to a jar or container and store in the fridge until ready to use!

Assemble the parfaits: Spoon some yogurt into the bottom of your serving glasses. Alternate layers of berry compote and granola with yogurt until glasses are filled. Finish with a sprig of mint. Serve and enjoy immediately!
