      Do you have any dairy/casein free products?
      Yes. The majority of their products are naturally dairy and casein free. Their line of gluten free products is dairy and casein free. All of their flours, cereals and grains are also dairy and casein free. We do have a few regular mixes which do contain dairy (and casein) and we encourage you to check the ingredient list on the label to be sure.

      Can your baking mixes be made with dairy and egg alternatives?
      Yes. All of their baking mixes can be prepared with egg or milk alternatives. For tips and suggestions to replace dairy and eggs, click here.

      Where are your grains, beans and seeds grown?
      Their raw ingredients are sourced from farmers throughout the United States and Canada. Occasionally, ingredients are not available in North America and we look internationally for these items. For inquiries about a specific grain, bean or seed, please email us.

      Are your products genetically modified?
      No. All of their products come from identity preserved seeds. This means the seed planted in the ground is non-GMO. We simply can't guarantee against cross pollination due to natural occurrences such as wind drift, so we do not label their products GMO-free.

      Do your products have additives or preservatives?
      No. their products do not contain additives or preservatives and all ingredients are clearly marked on their labels.

      How should I store my products?
      Their products are best kept refrigerated or frozen in airtight containers. We strongly recommend refrigerating or freezing the following products due to their perishability: flaxseed meal, organic flaxseed meal, golden flaxseed meal, almond meal, hazelnut meal, wheat germ and active dry yeast (do not freeze).

      How long can I use a product after the "Sell By" date?
      If stored properly in an airtight container in the fridge or freezer, a product can be useable 4 to 5 months past the "Sell By" date printed on the package. Because of their high oil content, whole grains can spoil easily. We recommend using the old adage, "when in doubt, throw it out."

      Are your products certified kosher?
      Yes. All of their products are certified Kosher by Rabbi Avrohon Teichman of Kehilla Kosher of Los Angeles, CA.

      Are your products certified organic?
      Bob's Red Mill does offer a wide selection of organic products certified by Quality Assurance International. Make sure the product is clearly labeled organic, as some items are available both organic and conventional.

      Adding whole grains to your baking can be quite simple. Here are some great ways to get whole grains.

      How do I modify a recipe for high-altitude baking?
      Here are some basic steps for high-altitude adjustments:

      • Baking Powder: Reduce each teaspoon by 1/8 to
      • Sugar: Decrease each cup by 1-2 Tbsp
      • Baking Soda: Reduce just like Baking Powder
      • Fats: No adjustments needed
      • Oven Temperature: Increase 25 degrees F
      • Cooking Time: Increase Slightly
      • Mixing: Be careful not to over mix. Do not over beat eggs.
      • Cookies: Usually no adjustments needed.
      • Yeasted Breads: Decrease the yeast by 1/4 tsp. Use less flour per cup of liquid. Yeast breads rise more quickly at higher altitude, so watch carefully.
      • Bake at higher temperature, for less time.

      Does the nutritional information refer to dry or cooked product?
      All of their nutritional information reflects the dry, unprepared product.

      Yes. Their baking soda and baking powder are aluminum free.

      Is your sea salt iodized?
      No. Their sea salt has been refined, but it has not been iodized.

      What is the difference between rolled oats, Scottish oats and steel cut oats?
      They offer cut oats and rolled oats. The rolled oats are made by stabilizing the whole oat groats, followed by steaming and rolling the oats to the desired thickness. This method is used for quick, regular and thick rolled oats. The cut oats we offer are the steel cut and Scottish oatmeal. These are made from the stabilized oat groat which is then cut. The Steel Cut Oats are cut into large pieces which produces a chewier texture oatmeal. The Scottish oatmeal is actually stone ground on their mills to produce a nice, creamy porridge.

      Which of your grains can be sprouted?
      Any of their whole grains which have not been heated or hulled can be sprouted. This includes their wheat berries, Kamut berries, spelt berries, rye berries and triticale berries.

      Are potato starch and potato flour the same product?
      No. Potato starch and potato flour are not the same and cannot be interchanged in recipes. Potato starch is made from just the starch of the potato and has a neutral flavor. It is primarily used in gluten free baking and can also be used as a thickener. Potato flour is made from the whole potato and has a distinct potato flavor. It can be used as a thickener. Recipes which call for potato starch flour are referring to potato starch.

      What is the protein content of your unbleached white flour, whole wheat flour and organic hard white whole wheat flour?

      • Unbleached White Flour = 12-13% protein
      • Organic Unbleached White Flour = 11.5-12.5% protein
      • Whole Wheat Flour = 13.5% min. protein
      • Organic Whole Wheat Flour = 14% min. protein

      What is the difference between regular flour and pastry flour?
      Regular flour (white or whole wheat) is milled from hard red wheat and has a higher gluten content. It is excellent for baking bread and other yeast-risen baked goods. Pastry flour (white or whole wheat) is milled from soft white wheat and has a lower gluten content. It is excellent for baked goods using baking powder or baking soda as leavening agents. It should not be used for baked goods where yeast is used.

      How Bob's Red Mill Began
      Bob's journey began serendipitously in the mid '60s after coming across a book about old stone- grinding flour mills. His enthusiasm was immediate and he decided to find usable stone mills, which were becoming rarer due to the domination of high-speed steel roller mills. His persistence paid off. Equipped with several sets of millstones from an old North Carolina water-powered flour mill, Bob and his wife ,Charlee, began their first mill in Redding, California.

      After a few years, they decided to pursue others interests and retired to Oregon City, Oregon in 1978. On an afternoon walk, Bob came across an old mill that, as luck would have it, had a big sign out front reading “for sale”. In just a few short months, he was able to source a beautiful old mill that could stone grind flours and cereals for local customers. Word quickly spread and Bob's Oregon City based mill enjoyed much success until 1988 when a fire destroyed the building.  Never one to back away from a challenge, Bob knew he owed it to his family of employees and loyal customers to build the business again from scratch. Rising to the challenge, he spent many years growing the business to where they are today. Their current site located in Milwaukie, Oregon is a 320,000 square foot facility covering some seventeen acres and produces thousands of products each day, all made with the same good old-fashioned techniques thier customers have come to love and trust since thier beginning.

      Carlieta's New Baked Corn

      • 1 17oz. can Cream Style Corn
      • 2 Eggs or 1/2 cup Liquid Egg Substitute
      • 1 tsp. Oil
      • 2 Tbsp. Bob's Corn Flour
      • 2 Tbsp. Green Bell Pepper, finely chopped
      • 1 Tbsp. Yellow Onion, finely chopped
      • 1/4 cup Non-Fat Milk
      • 1/2 tsp. Salt

      COMBINE all ingredients, mix thoroughly and POUR into baking dish which can be placed inside another. POUR hot water into outer baking dish and BAKE in preheated oven at 350° for one hour or until knife inserted in center comes out clean.
