Cafe Altura Coffees are organically grown at attitudes above 3000 feet on small family owned farms from around the world. The coffee tree grows according to its natural cycle, without the use of harmful chemical fertilizers and pesticides. By employing companion planting, compost and shade trees, Cafe Altura's farmers create a balanced, healthy and self-sustaining growing environment that replenishes the topsoil and provides a winter home to many species of migratory birds. Cafe Altura buys from the same farms each year to insure the integrity and quality of their coffees. Special harvesting selects ripened cherries washed in rainwater, sun dried, hand sorted, then air roasted for a rich smooth taste.
Cafe Altura imports and roasts only coffees certified organic by the USDA’s list of accredited agencies . Their small, batch-roasting facility in Santa Paula, California is also certified as an organic production facility. Their imported coffees and the roasting facility are inspected annually to assure compliance with organic standards.
The certification of organic coffee follows the bean from farm to cup. In order to label their yield as organic, all farms must meet a stringent criteria for organic production which audits everything from mulching techniques, soil quality, pest management and water conservation to processing and transportation. With the added costs of organic cultivation techniques comes an increased premium for the beans on the open market. The extra cost paid by Cafe Altura and that of their customers supports products that aim to achieve great quality without sacrifice to the land, the workers or the fauna.
The care needed to provide the best organic coffees has as much to do with what's overhead as it does with what's underfoot. A healthy shade canopy of mixed native trees provides benefits to both the consumer and the ecology of the farm. Consumers are rewarded with increased flavor complexity as a result of the longer ripening times and nutrient rich soils, and the surrounding ecosystem benefits by using the trees as a home and natural corridor between plots of natural habitat.
The habitat created by the trees is arguably most appreciated by the birds which live on and around the farm. By protecting against soil erosion, brutal sun exposure, over drying of soils and loss of native animal habitat with the use of native trees, organic farmers continue to find sustainable solutions to problems using techniques developed by nature.
Frequently Asked Questions
What makes Cafe Altura different?
Cafe Altura was started in 1980 when the viability of organic companies and the nation’s interest in organic products was still unknown. Cafe Altura was founded to support the principles of organic farming – sustainability, living wages for farmers and stewardship of some of the worlds most verdant and beautiful landscapers – and to provide an avenue for the quality organic beans to reach the U.S. marketplace. Cafe Altura has remained small in both production capacity and management style to ensure that these concepts remain guiding principles.
Is Cafe Altura a shade grown coffee?
Yes. The shading of the delicate Arabica coffee trees is an important element in the organic management of the coffee farms. The Ecosystem in and around the trees, such as, birds and insects, as well as, the micro level biodiversity in the soil beneath, all benefit from having native trees in the system. As consumers, we see a benefit from the longer ripening times of the cherries providing a more complex flavor.
Does Cafe Altura roast their own coffee?
Yes. We roast and package Cafe Altura in an Organic Certified roasting facility in Santa Paula, California. All of their coffees are small batch roasted to ensure cup quality and integrity. Their coffees are roasted to order and Cafe Altura maintains minimal standing inventory of coffees roasted only days before.

The association oversees the production and processing of labeled products by enlisting the services of consultants in a program of annual written reports of farm and processing facilities. The consultants are approved by the Biodynamic Farming and Gardening Association of Kimberton, Pennsylvania.
How long has Cafe Altura been in business?
Cafe Altura began in 1980. They were the first company to import organically grown coffee in the United States. They were also the first company to have independent third party certification.
How much caffeine does Cafe Altura have? How much caffeine is left after decaffeination?
Cafe Altura has 1% caffeine. This is standard amongst all high grown (Arabica) varieties of coffee. The decaffeination process removes 97% of the caffeine from the 1% caffeine it contains. Cafe Altura drip brewed coffee contains 50 to 63 milligrams of caffeine per 6 oz. cup.
Is Cafe Altura high in acid or acid free?
Cafe Altura is a high grown Arabica coffee. Coffee grown in altitudes of 1,000 or more meters will be naturally lower in acids than coffee grown at lower altitudes. This high grown coffee is also more flavorful and gives brightness to the flavor. A darker roast coffee will be lower in acid content as it burns out most of the chemicals which cause the acid sensation. Preparing coffee with a coffee “Toddy” takes most of the acid from the ground coffee as it filters out the acid. If acid free coffee is needed, this type of preparation is preferable.
Is it the acid that makes my stomach hurt?
When coffee is brewed and left on a hot plate (burner) for more than twenty minutes, the liquid will concentrate the acids in the coffee. This may contribute to stomach discomfort. Try storing freshly brewed coffee in an airpot or thermos.
About Cafe Altura
When coffee was discovered a thousand years ago, it was a preciously guarded secret, so valuable the beans were used as currency. In 1980, a group of coffee lovers in Ojai, California heard of a family farm in the mountains of Mexico which grew coffee naturally, the same way it had been when first found in the wild. Setting off on an adventure, these coffee lovers found a place where self-sustaining agriculture produced a smooth and aromatic coffee with no trace of bitterness. They came back and started Cafe Altura, the organic coffee, so you can taste coffee the way nature intended.
