Once baked, their products will stay fresh at room temperature for about 2 days, wrapped tightly with plastic wrap or a sealed container.

Once baked, their products freeze wonderfully. Simply wrap tightly with plastic wrap and store in a freezer bag. Products may be stored in the freezer for up to 6 months. To defrost, just thaw product on counter, at room temperature.

You may also freeze raw cookie dough, wrapped tightly, for up to 3 months or refrigerated, for up to one week.

She was more determined than ever to create a product line packed with all natural ingredients, that people with and without celiac disease or gluten intolerance would enjoy. XO Baking Co.™ owner Lindsey Deitsch is a Certified Health and Nutrition Coach, professional chef and baker, an accomplished athlete/marathon runner and marathon training coach and is a Black Belt!  Lindsey has been coaching and running marathons for over 10 years, and during that time, has learned the role that a healthy diet plays in the success of an athlete. She has used this knowledge to teach others the role a balanced diet and lifestyle play in overall health and wellness.

Lindsey received her Bachelors degree in Public Health from UC Berkeley and is a graduate of the Westlake Culinary Institute where she studied under Chef Cecilia de Castro. Lindsey worked as a Nutritionist at UCLA’s Clinical Research Center for over 4 years. She received her training and certification as a Health Coach from the Institute for Integrative Nutrition in New York City.

You will need: 1 large egg, 2 teaspoons vanilla extract, 1/2 cup (1 stick) unsalted butter softened (Butter can be replace with any non-dairy alternative)

  1. Heat oven to 350°F. Line a cookie sheet with parchment paper.
  2. In a large bowl, beat the butter, egg and vanilla, until smooth.
  3. Drop dough onto the cookie sheet, using a rounded tablespoon or roll dough into balls. Flatten each ball with your hand, approx. 1/4" thick.
  4. Bake 10-12 minutes or until lightly golden around the edges. Cool on baking sheet for 5 minutes, then place on wire rack.
