About La Tourangelle

The production of gourmet oils is a time-honored tradition in France. Originally, each village had a mill which roasted and extracted the oil from nuts gathered by local farmers. These delicious oils were used in hearty rustic fare and were also found in Paris' finest restaurants.

La Tourangelle is one of just a handful of these remaining mills that keep this tradition alive. Through a partnership between one of the oldest and most respected French artisanal oil mills, Huilerie Croix Verte SAS from Saumur, France, and California Oils Corporation, La Tourangelle has succeeded in recreating the spirit of a traditional French oil mill in Woodland, California.

Hand-crafting a wide range of delicious artisan oils in both California and France, La Tourangelle distributes an exclusive line of premium quality oils in many countries around the world.

La Tourangelle - Toasted Sesame Oil - 16.9 fl oz (1 pt 0.9 fl oz) 500 ml

La Tourangelle Toasted Sesame Oil is distinctive, flavorful and all-natural.  La Tourangelle has partnered with one of the oldest Japanese oil mills to bring you this toasted sesame oil, crafted in central Japan strictly following 270-year-old traditional methods.  Slowly roasted to perfection, expeller-pressed and lightly filtered, this oil adds a rich, deep flavor to your salad dressing, stir-fry, deep-fry, and BBQ marinade for an authentic Asian cuisine style.

    Health Benefits
Sesame Oil, also known as gingelly oil and til oil, is an ancient ingredient. The Assyrians used it as a cooking oil more than 600 years before Christ. It was expensive, however, and a hundred years later in Persia only the rich could afford it. It is still used as a medicine in India , and oil pressed from the raw seed is a massage oil in Ayurvedic medicine. Its low saturated fatty acid content and high unsaturated fatty acid content makes it a very healthy oil.

    Production Process
La Tourangelle's mill slowly roasts the sesame seeds using lower temperatures. The result is a lighter colored, more richly flavored oil with a subtle, toasted taste. The production of Sesame Oil begins with sesame seeds harvested from South America or Africa. The seeds are toasted and then expeller (machine) pressed to extract the oil. This oil is filtered several times and then bottled. The quality of Sesame Oil varies depending on the quality of the seeds, and the length and temperature of the toasting process. While nearly all the Sesame Oil now available in the U.S. and in Europe is produced in China or Taiwan using methods that involved certain production shortcuts, La Tourangelle's Japanese partner uses only the freshest, highest quality seeds that are painstakingly cleaned and slow toasted. Japanese craftsmanship in the production of sesame oil is recognized as superior throughout Asia.

    Usage
Sesame Oil has long been the universal cooking medium in Asia, imparting the characteristic flavor to the foods of its regions. In Chinese and Korean cuisine it is added as a flavor highlight to cooked dishes. The Japanese often add about 10% toasted Sesame Oil to the oil used for tempura or deep-frying, creating a rich, background flavor. American cooks may want to use Sesame Oil to flavor an Asian stir-fry or noodle dish or as a marinade for meat or fish. Sesame Oil makes a delicious dressing for a Chinese Chicken Salad. Sesame Oil, rice vinegar, fresh grated ginger, and mustard is a delicious dressing for any combination of salad greens.

Why are La Tourangelle oils so healthy?

La Tourangelle oils are packed with Omega 3, 6 and 9 the three keys to a healthy diet natural antioxidants and essential vitamins.

It has been proven that a balanced intake of omega 3 and 6 along with high level of omega 9 reduces significantly the risk of dying from a cardio-vascular related disease.

    What are omega's?

Mono and poly-unsaturated fats have health benefits. The best mono-unsaturated fat is the Oleic acid or Omega 9 found in high level in olive oil, hazelnut oil, almond oil or sesame oil. The best poly-unsaturated fats are Linolenic and linoleic fatty acids or omega 3 and 6. Omega 3 and 6 are found in walnut oil and grapeseed oil. It has been proven that a balanced intake of omega 3 and 6, along with high level of omega 9 significantly reduce the risk of a cardiovascular related disease.

Which oil is the best? Is my olive oil enough?

Each oil has specific benefits. Olive oil is an excellent source of omega 9 but brings no omega 3. Walnut oil is a good source of omega 3, 6 and 9. The best way to ensure a healthy lifestyle is to rotate oils to get all needed omega's.

Rotating oils is the key to ensuring the proper intake of each omega.

Here is the amount of each found in La Tourangelle oils and olive oil:

What is the difference between Roasted Nut Oils and Refined Nut Oils?

La Tourangelle Roasted Nut Oils are handcrafted in their Artisan oil mill and should not be confused with refined nut oils.

How La Tourangelle roasted nut oils are produced:
La Tourangelle roasted nut oils are made from the best quality nuts available. For instance most of the walnuts they use come from the orchard located next to the oil mill. They buy the crop and sundry the walnuts in the traditional way. Each batch of nut oil is unique and handcrafted following a 150 year tradition. First the nuts are hand roasted in cast iron kettles before being expeller-pressed. The oil is then lightly filtered and bottled. Their roasted nut oils are very flavorful with rich colors and more natural antioxidants than refined nut oils because many are removed during the refining process.

The best way to compare is of course to taste the difference, which is often likened to the relationship between refined olive oil and extra virgin olive oil.

How refined nut oils are produced:
Refined nut oils including refined walnut oil and refined almond oil are made from what is called nut oil stock. Nut oil stocks are actually sub-standard nuts sold at discounted price by California nuts growers to oil manufacturers. The nuts are then expeller-pressed in a screw press and thereafter refined to clean impurities. The result is 100% pure nut oil but with no flavor, no color and no smell. It is suitable for use in the kitchen or for cosmetic.
