    Kamut Country Casserole Recipe

    • 2 cups Organic Kamut Berries
    • 1 tsp 1/2 Onion, chopped
    • 1 cup Celery, diced
    • 1 can Tomato Sauce (8oz)
    • 1/3 cup Water
    • 1/3 cup Brown Sugar
    • 1/4 cup Catsup
    • 1 Tbsp Vinegar
    • 1/2 tsp Sea Salt
    • 2 tsp prepared Mustard
    • 1 lb Lean Ground Beef

    Brown ground beef with seasoned salt; drain. Sauté onions and celery in canola oil until transparent; drain and mix with browned meat. Mix together tomato sauce, water, brown sugar, catsup, vinegar, sea salt, mustard and blend well. Add meat mixture and cooked Kamut and mix. Bake in 350° degree oven for 1 hour in greased, covered casserole dish. Very tasty! Makes 9 servings.

    French Bean and Berries Salad Recipe
    Flageolet Beans and Kamut Berries work well together, but any combo will work.

    Salad

    • 2 cups cooked Organic Kamut Berries
    • 2 cups cooked Flageolet Beans
    • 1 cup Green Onions, chopped
    • 1 cup Tomatoes, diced
    • 2 cups Spinach, chopped

    Vinaigrette

    • 1/2 cup Olive Oil
    • 1/4 cup Lemon Juice
    • 2 Tbsp White Wine Vinegar
    • 2 Tbsp Dijon Mustard
    • 1/4 cup Shallots, minced
    • 1 tsp Thyme
    • 1 tsp Tarragon
    • 1 tsp Parsley Flakes
    • 1/2 tsp Sea Salt
    • 1/2 tsp Black Pepper

    Step 1
    Soak Flageolet Beans (about 1 cup) overnight. Drain water and rinse off beans.

    Step 2
    Place beans in pot covered with plenty of water. Bring to a boil; reduce heat to a simmer, placing lid on pot. Cook until beans are soft, about 1 hour.

    Step 3
    Place Kamut Berries (about 1-1/2 cups) in a pot and bring to a boil. Reduce heat to a simmer and place a lid on the pot. Cook until berries are soft, about 1 hour.

    Step 4
    While beans and kamut are cooking, mix vinaigrette ingredients together in a large bowl. Slice veggies and place in the bowl.

    Step 5
    Drain beans and berries and rinse in cold water. Measure out 2 cups of both the beans and the kamut and add them to the other ingredients in the bowl. Blend together all ingredients with vinaigrette and chill for a few hours or overnight.

    Makes 10 servings.
    Note: Any whole grain or combination of grains can be used instead of the Kamut Berries in recipe, such as Whole Oat Groats, Hull-less Whole Barley, Wheat Berries, Long Grain Brown Rice, or Spelt Berries.

    Yes. The majority of the products are naturally dairy and casein free. The line of gluten free products is dairy and casein free. All of the flours, cereals, and grains are also dairy and casein free. They do have a few regular mixes which do contain dairy (and casein) and they encourage you to check the ingredients to be sure.

    Can the baking mixes be made with dairy and egg alternatives?
    Yes. All of the baking mixes can be prepared with egg or milk alternatives. For any recipe calling for milk, you can use a replacement "milk" made from soy, rice, almond, or hemp. However, soymilk works best. To replace butter, use a non-hydrogenated margarine, shortening, or soy margarine because using a regular oil may not work. To replace buttermilk, simply add 1 teaspoon lemon juice or cider vinegar per one cup of milk replacement. Stir and let it stand a minute before adding to your recipe. If a recipe calls for milk powder, you can use a non-dairy milk equivalent in powdered form, such as soy powders or powder alternatives made from potato. If the recipe calls for less than 2 tablespoons of milk powder, you can simply omit the ingredient.     How Bob's Red Mill Began
    Bob's journey began serendipitously in the mid '60s after coming across a book about old stone-grinding flour mills. His enthusiasm was immediate and he decided to find usable stone mills, which were becoming rarer due to the domination of high-speed steel roller mills. His persistence paid off. Equipped with several sets of millstones from an old North Carolina water-powered flour mill, Bob and his wife ,Charlee, began their first mill in Redding, California.

    In 1978 they moved to Oregon City, Oregon, and on an afternoon walk, Bob came across an old mill that, as luck would have it, had a big sign out front reading “for sale”. In just a few short months, he was able to source a beautiful old mill that could stone grind flours and cereals for local customers. Word quickly spread and Bob's Oregon City based mill enjoyed much success until 1988 when a fire destroyed the building.

    Never one to back away from a challenge, Bob knew he owed it to his family of employees and loyal customers to build the business again from scratch. Rising to the challenge, he spent many years growing the business to where they are today. Bob's Red Mill's current site located in Milwaukie, Oregon is a 320,000 square foot facility covering some seventeen acres and produces thousands of products each day, all made with the same good old-fashioned techniques that Bob's customers have come to love and trust since the beginning.

    Basic Cooking Instructions for Organic Kamut Berries
    These instructions are printed on the label of Organic Whole Grain Kamut Berries. Lactose Free, Low Fat, Organic, Soy Free, Vegan.

    • 1 cup Organic Kamut Berries
    • 3 cups Water
    • 1 pinch Sea Salt (optional)

    Step 1
    Presoaking the grains is optional, but recommended. For best results, soak grain overnight.

    Step 2
    Drain off soaking water. Bring 3 cups water to boil; add soaked grain. Cover and simmer for 30 to 40 minutes (note: if grains were not soaked, please allow 45-60 minutes), or until tender and plump. Drain off any excess water.

    Yields approximately 2 cups cooked grain (4 servings)
