If you have been led to a gluten-free diet, you are not alone and you have not gotten there because your body is defective in some way. They were told by a scientist in Italy that has devoted his studies to gluten intolerance that everyone is unable to digest gluten to some extent-some more than others. Achieving high levels of gluten in modern hybrids has been a goal of plant breeders over the last century. It does not seem surprising to us that modern wheat varieties with higher levels of gluten have coincided with a sharp increase in wheat intolerance and Celiac Disease. Gluten is what makes wheat different from any other grain. Gluten is a protein, making up close to 80% of the total protein content of wheat, which gives dough stickiness and is preferred for bread and pasta production. More and more people are eliminating gluten from their diet and an increasing number of individuals are being diagnosed with Celiac Disease. Gluten-free diets have also been used in conjunction with the treatment of other medical conditions, such as Autism, Multiple Sclerosis, Attention-Deficit/Hyperactivity Disorder and Irritable Bowel Syndrome. Others report not having any particular medical condition but feeling better when limiting wheat consumption.
Put simply, gluten sensitivity is caused by the inability to break down wheat protein or gluten during digestion. Large proteins remain undigested in the small intestine, creating inflammation. This creates damage to the walls of the intestines and the inability to properly absorb nutrients. As more and more undigested proteins become present over a period of time, the body's immune system eventually begins to see them as invaders and starts to fight them with an autoimmune response. Years of this hidden internal activity can lead to many symptoms and additional serious health concerns. When symptoms overcome good health, it is time to completely eliminate gluten from your diet. The good news is that restoring and maintaining good health is more important than eating gluten. Eliminating gluten is the only way to heal and if your immune response has led you to a diagnosis of Celiac Disease, you must eliminate gluten from your diet completely. More and more delicious tasting gluten free products are available these days, so maintaining a gluten free diet is becoming less of a sacrifice.
Jovialgluten free products were developed out of a heartfelt compassion for all of us who have had a food intolerance critically effect personal health and wellness. They believe eating gluten free should be pleasurable and not feel like a sacrifice. It is not that products formulated without gluten can't taste great; it's how relentless you are in developing them.
The natural genetics of wheat are more complicated than that of most other plants. Wheat was transformed over a period of 10,000 years by hybridization in the wild and in the field and by the constant natural selection of preferred seeds by farmers. Achieving high levels of gluten in modern hybrids became a goal for plant breeders over the last century. Wheat is a unique grain because it contains gluten, which gives dough the ability to rise better when leavened. Many individuals are unable to digest gluten and so modern wheat varieties with higher levels of gluten have naturally increased the incidence of wheat intolerance.
Einkorn has always remained the purest form of wheat. Like einkorn, most plants are diploids, which mean they have one set of chromosomes from a male parent and one from the female parent. When other species of wheat were created, additional sets of chromosomes were added. Emmer wheat was created roughly 2,000 years after einkorn by the hybridization of two wild grasses adding two sets of chromosomes. Kamut™and Durum Wheat are descendants of Emmer. Spelt was the first wheat hybridization that occurred with the help of man between cultivated emmer and a wild grass, creating a species with six sets of chromosomes. Common bread wheat descended from spelt.
Genetic modification (GMO) is a major source of heated debate because it incorporates genes from other organisms in plants. Genetically modified wheat is currently not grown anywhere in the world.
Eiinkorn is the most exciting new ancient grain to be offered on a national retail level. Einkorn is genetically pure, exceptionally nutritious and surprisingly delicious. It is the healthiest form of wheat because it has never been hybridized. Einkorn is a perfect choice as a nutritious and unique alternative grain for those seeking a healthy option to modern wheat. Though there are some initial in-vitro studies that indicate einkorn is suspected to be less toxic than other species of wheat, Celiac Patients should not consume einkorn products until further clinical studies are completed and their findings are evaluated by the FDA.
If you are a Celiac Patient, be aware that-
- Einkorn is a species of wheat and does contain gluten.
- Clinical studies that have been performed to date have been in vitro only.
- Celiac patients should not consume einkorn products until further clinical studies are completed and their findings are evaluated by the FDA.
Jovial has also developed the most authentic tasting gluten free products for individuals with Celiac Disease so everyone can enjoy great, wholesome food from a trusted source.
When you see the First Ever trademark, it is their guarantee to you that they are providing the purest and most thoughtfully produced Einkorn product possible. Seeds and supply are virtually unavailable, so they have had to take care of growing the grain to fulfill their needs. Einkorn is also a very low yield crop, producing less than half the harvest of common wheat, which makes it financially challenging for farmers, so they are committed to building a lasting, respectful relationship directly with their growers.
Einkorn performs very differently than other wheat, resulting in numerous difficulties during milling and processing. They have overcome these hurdles by working with amazingly talented food artisans that have had expertise passed down through generations. Jovial has many more einkorn products under development and will bring them to you as they increase their supply of grain. By controlling the entire supply chain, from seed to package, they can provide an absolute guarantee that you will always receive the purest and most delicious einkorn products possible.
Ancient grains are inherently more nutritious than modern varieties. Einkorn is the most ancient wheat and is the result of Mother Nature's untouchable craftsmanship.

Frequently Asked Questions
Q: I would like more information about their 100% compostable packaging material.
A: The inner bag and windows of their packages are made from FSC wood-pulp and are fully certified to the European (EN13432) and American (ASTM D6400) norms for compostable packaging. This material is suitable home composting and will typically break down in just a few weeks and is also biodegradable. Additionally, the production has gained CarbonNeutral™ accreditation. Similar materials are principally made from raw materials such as corn, potatoes or wheat. They have selected their material because it is produced from wood pulp that is sourced from managed plantations, having a lesser impact on the environment and avoiding the possible use of Genetically Modified Organisms. This material is not made of plastic and is not suitable for standard plastic recycling.
Q: I followed their cooking instructions, but the pasta did not turn out so perfect?
A: Be aware that their first batch of einkorn rigatoni and penne listed the incorrect cooking time on the box. Please cook these two items for 13 and not 10 as listed. Jovial: A lifetime getting here.
Experiencing the loss of both parents to cancer at a young age led me to a personal and professional interest in organic foods. A little struggle of my own with this disease drove me to a deeper understanding of how essential food is to wellness. Having children with food allergies made me go beyond organic to question how a healthy organic diet could still be a source of illness.
These life lessons were experienced in the company of my Italian-born husband Rodolfo, after they met in Bologna when I turned twenty. He had experienced similar lessons in life and they had the same interests. His personal passion for farming led us to realize that the most vital starting part of the food chain was in distress.
The Disappearance of Traditional Food Varieties
A trip to Italy as a teen introduced my American taste buds to heirloom foods. It was the first spoonful of a homemade apricot jam, made from the fruit of an age-old tree that spoke to me in a profound way. On that same beloved trip, I plucked fresh figs from a giant tree and their once in a lifetime flavor mesmerized me. Tasting this fruit was firsthand experience of nature's masterly crafted offerings, perfectly engineered for the lucky few who were smart enough to simply honor and not meddle with them.
Fast forward some twenty years and I am feeling profound disappointment over the selection of apples in my local organic supermarket in Italy. Surrounded by the choice of good looking Golden Delicious, Gala, Granny Smith, and Fuji on the outside, yet fully aware I am bringing home sheer tastelessness on the inside. How could this be? I fled the United States for flavor and here I was faced with the same varieties of displeasing apples all over again. What had Italian farmers done with the crisp, tart and juicy varieties of their ancestors?
Have you ever heard that the banana risks extinction? I never would have imagined there is only one commercial variety grown throughout the world which goes by the name of Cavendish. The same banana is grown and eaten worldwide. This variety is being wiped out by a fast-growing fungus and a back-up variety was never developed. Banana seeds were bred out because they were big and hard so it may take too long to procure a replacement if the fungus isn't managed first.
Many informed consumers oppose Genetically Modified Organisms (GMO), but few of us ponder the detriment that plant breeding has had on their food. Naturally bred hybrid plant varieties accomplished much, transforming a pale little clump of wild carrot into a long cylinder of bright orange. I once tried to grow a strictly heirloom garden and realized the varieties are not always easy to cultivate and yields can be low. However, the mission of plant breeders went astray a few decades ago as they concentrated on developing new varieties for commercial reasons only, varieties that could withstand mechanical harvesting, transportation and months of storage. Flavor equals nutrition so as the new varieties lost flavor they also lost nutrients.
The Jovial Difference-From Seed to Shelf
As they developed the Jovial brand, they decided it was time to go beyond organic and take a closer look to find the purest of plant varieties. This led us to the exciting rediscovery of einkorn, the most ancient wheat of all, and a clear vision of what their future would be.
Jovial had its official start in 2010, but was idealized for many years. It is their dream to change the future of agriculture by creating consumer demand for ancient and heirloom varieties of food. They have a deep commitment to support a small-scale, sustainable economic model that focuses on farming first and then considers the entire process all the way through to the shelf. They believe the purest food they all are all seeking can only come from the purest seed
