About Dancing Deer Baking Co.
There were three company founders; a talented baker, Suzanne Lombardi, who originated many of Dancing Deer's recipes, a theoretical physicist/business strategist, Ayis Antoniou, who loves to cook, and a business woman/artist, Trish Karter, who's passion is nature and the environment. All three have moved on, but many of their founding principles still remain with us at Dancing Deer.
Incorporated in April 1994 to provide high quality, all-natural baked goods to accompany the growing market for gourmet coffee, we started out in a former pizza parlor on a busy street corner with a couple of convection ovens. Our specialty was cakes, sold primarily to cafes and restaurants. In 1996 we brought out a line of packaged consumer goods under the Dancing Deer label. Not long after that we opened the doors to passers by who demanded access and forced us in to having a small retail operation. We surprised ourselves, and a lot of other people, when we won the Food Industry's equivalent of the "Oscars" in 1997 for our Molasses Clove Cookie. That same year, a food writer from (no kidding) Hollywood arrived at our counter looking for directions. Before we could really comprehend what was happening, Dancing Deer was on national TV being touted as making the "best cake in America". We had managed to have a toll free number up and running within 24 hours of receiving his call, and thus our mail order business was launched. Many more awards and honors have followed.
It has been an interesting journey. Our successes are due to luck, a tremendous amount of dedication and hard work, and a commitment to having fun while being true to our principles. We have had failures as well - and survived them with a sense of humor.

Dancing Deer Baking Co. Pancake and Waffle Mix Pumpkin Spice offers a blend of sweet pumpkin, buttermilk, and spices. All you need is milk, eggs & butter (at room temperature). Dancing Deer Baking Co. started their mix line in 1997 with their Chinese Five Spice Gingerbread Mix. A customer who loved the creative, artisan qualities of their cakes and cookies had asked us to reinvent this classic. Since then they've been doing great things with special ingredients and simple mixing techniques.

How long will my product retain its quality and freshness?
Dancing Deer products are ALL natural which means they do not contain artificial ingredients or preservatives! On every product, Dancing Deer stamps an "enjoy by date" which indicates how long your product will retain its quality and freshness. With goodies this yummy, the "enjoy by date" never seems to be a problem!
Do Dancing Deer products contain nuts?
Currently, Dancing Deers IS using PEANUTS and TREE NUTS in some of their products. Dancing Deer follows a strict allergen control program, where they do a chemical clean up upon the completion of using the nuts. Dancing Deer also takes measures to ensure that there is no co-mingling of ingredients, however given the presence of nuts in their bakery there is always a chance that nut-free products could come into contact with nuts and/or their by-products.
Are Dancing Deer products certified Kosher?
Yes! All of Dancing Deer's products are certified Kosher Dairy (Star D) under the supervision of the Star-K. Dancing Deer products are Dairy, Non-Cholov Yisroel; Kosher for year-round use, excluding Passover.
Are any Dancing Deer products sugar-free?
Sorry! At this  time none of Dancing Deer's products are sugar-free - Dancing Deer uses only all-natural ingredients and have not yet found a suitable all-natural substitute for pure cane sugar.
Are any Dancing Deer products vegan?
No, all Dancing Deer products contain eggs and/or egg whites.
Are Dancing Deer products gluten free?
No, all Dancing Deer products contain wheat and wheat flour.
Suggested Use
To Make The Batter: Whisk together 1 egg, 2/3 cup milk and 2 tbsp. melted butter. Add 1 cup of the dry mix to a separate bowl. Add the liquid ingredients and stir together until just blended. Serves 2 - 3.
For Pancakes: Preheat griddle over medium heat until a water droplet sizzles when flicked onto surface. Grease surface lightly and ladle pancakes about 1 inch apart. Cook until bubbles forming on top of pancakes begin to pop, 1 - 2 minutes. Flip and cook 1 minute more.
For Waffles: Using an electric waffle iron, follow manufacturer's instructions. Once opened store in a cool dark place for up to 3 months.
Serving Suggestions: For a twist, add toasted pecans and candied orange peel or top with sautéed apples and pears and a splash of brandy. Freshly whipped cream is wonderful too! Warnings

Dancing Deer pancake mixes have always made yummy pancakes for us. This one was perfect for the holidays. A dollup of cream made it incredibly tasty.

I don't care for this product. It's not because the ingreditents aren't good. I've been a fan of Dancing Deer's for a long time. I just do not like the flavor. I took a chance and it didn't work out for me.
