    How is chocolate made?
    Raw cocoa beans are dried and roasted, then they are cracked, and the "nibs" (the center of the cocoa bean) are ground. Using a hydraulic press, the cocoa butter is extracted, leaving a dense, rich, and bitter substance called chocolate liquor. Despite the name, this substance does not contain any alcohol. After drying, the chocolate liquor is ground into powder form. This is unsweetened chocolate.

    Dairy Free/Gluten Free Chocolate Chip Cookies
    (Yields 3 1/2 dozen cookies)

    • 2 cups of Arrowhead Mills Rice Flour
    • 2/3 cup of potato starch
    • 1/3 cup tapioca flour
    • 1 tsp. xanthan gum
    • 1 tsp. gluten free Hain Baking Powder
    • 1 tsp. baking soda
    • 1/2 tsp. Hain Sea Salt
    • 1 cup of Maranatha almond or peanut butter
    • 3/4 cup dark brown sugar
    • 1/2 cup organic cane sugar
    • 2 eggs
    • 2 tsp. gluten free vanilla extract
    • 1 bag (10 oz) Dairy Free Chocolate Dream Semi-Sweet Gluten Free Chocolate Chips

    Preheat Oven 375 Degrees

    1. Combine nut butter, sugars in the bowl of a mixer and beat well, beat in eggs one at a time, add vanilla, continue beating and scraping down sides.
    2. Gradually add the flour and starch, mix well.
    3. Stir in chocolate chips.
    4. Drop tablespoons of dough 2 inches apart on a well greased cookie sheet.
    5. Bake 9-12 minutes until cookies are golden.
    6. Let cool 1-2 minutes before removing from sheet.

    About Chocolate Dream

    The roots of RICE DREAM and SOY DREAM go back to 1971, when Robert Nissenbaum, one of the original founders, had opened Morning Dew Organic Food Market in St. Louis, MO. It was one of the first organic/natural food stores in the United States.
