      All true teas stem from the plant Camellia sinensis, an attractive perennial shrub about five feet tall with gentle rounded leaves and tender twigs. Tea becomes green, black, or other varieties depending upon the time of harvest and the way it is cured and handled. Tea begins to oxidize as soon as it is picked. Chinese and English teas allow oxidation to proceed as they dry, but with Japanese green tea, oxidation is skillfully halted by the steaming and rubbing process.

      Herbal teas are not true teas and do not contain any tea leaves at all. They are infusions that are made from many types of plants or combinations of plants simmered in boiling water. Each herb has various healthful attributes such as plant chemicals called polyphenols, volatile oils, and antioxidants.

      EDEN Organic Sencha Mint Green Tea is a delightful combination of both true tea and herbal tea - Sencha Green Tea and two herbal favorites, organic spearmint and organic peppermint.       EDEN Sencha is organically grown on remote, centuries old tea plantations of Uji, Japan by the Nagata family. Unlike most farmers the Nagatas process their first, most prized leaves into Sencha. While most tea farmers spray their plants with chemicals fifteen to twenty times per year, the Nagata family has rejected chemical agriculture completely. They do not use animal manure, chemical fertilizers, herbicides, or pesticides and replenish nutrients in their soil only with vegetable quality compost. The Nagatas are somewhat of a curiosity to the neighboring tea farmers. Their plants are not overly protected and pampered, and are allowed to grow according to their own pattern. Although they harvest slightly less tea than those using the pampered and chemical methods, their tea plants produce tea for twice as long a period of time. Chemically grown plants burn out in about twenty years, but the Nagata plants commonly produce for forty years, and some for as long as one hundred years. The Nagata family has supplied natural food shops around the world with organic sencha and other organic teas since 1974.

      Our spearmint and peppermint are organically grown, hand harvested and naturally dried on a small farm in northern Egypt, and are of the finest quality. Both mint varieties were chosen for their exceptionally high levels of menthol, a volatile oil, responsible for mint's cooling effect and for the pronounced sweet flavor of spearmint. Mints are native to the Mediterranean area and northern Africa where they have been cultivated since ancient time.

      According to Greek myth, the goddess Persephone became jealous over Pluto's affections for the beautiful nymph Minthe, so she cast a spell and turned Minthe into a lowly common plant. Pluto was unable to reverse Persephone's spell but was able to lessen the curse by giving Minthe a scent that grew sweeter and more uplifting the more it was tread upon. Over time the name Minthe changed to Mentha and hence the name for the family genus of mint - Mentha. Although there are many types of mint, the two main ones are peppermint (Mentha piperita) and spearmint (Mentha spicata). We use more spearmint for sweeter tea.

      Hot:
      Eden recommends using a cermaic, glass, earthenware or stainless steel kettle or teapot. heat water almost to a boil. Steep the tea bag for 4 plus minutes and remove. Do not boil green tea bag.

      Iced:
      For a glass of ice tea, brew as above using less water. After steeping, cool and then pour into an ice filled glass. To make a pitcher of ice tea, Eden recommends using 4 tea bags to 1 quart water for 6 servings.

      About Eden Foods

      Eden was founded in Ann Arbor, Michigan in 1968 by a group of friends who were trying to source good food. They were motivated by their studies of a worldwide phenomenon centered upon macrobiotics and its principles of whole grains, plant based protein, and locally grown food produced without toxic chemicals, etc. Because they couldn't find this kind of food in the grocery stores, they started the Eden Food co-op, placing $200 orders to Erewhon in Boston and Chico-San in California.
