Frontier Natural Products Certified Organic Cayenne Powder contains non-irradiated ground cayenne peppers that are freshness dated. Burdock roots are very fibrous, resulting in soft, stringy, cottony type material when cut. This material looks like, and is often mistaken for mouse nesting in the final product. However, it is the innermost part of the root and contains the same constituents as the more woody outer pieces.

Constituents of Note: Inulin is the most abundant constituent of burdock, being present at up to 45% in the root. Other constituents include mucilage, a tiny bit of essential oil, tannins and a number of plant acids.
Did you know? Burdock is grown as a vegetable, primarily in Japan, where it is called gobo. The young roots are harvested before they become fibrous, are peeled to reveal the creamy interior, and then eaten raw, like carrots, as well as in soups and stir-fries. Gobo has a crunchy, somewhat sweet and starchy flavor, and when eaten as a vegetable it is a source of dietary potassium and magnesium. Burdock, like its relatives salsify and chicory, does not contain starch, but rather inulin, a non-starch alternative for energy storage for these roots.
Burdock root is a popular folk remedy, and the fresh root is also a tasty vegetable. It is a superior tonic herb and alterative herb. Burdock has a special affinity for the skin and is used in all types of skin preparations. It also makes a pleasant tasting tea.
The Plant: Burdock is a wide-ranging plant, native or naturalized across North America, Europe and Asia. Usually a biennial, it consists of a rosette of leaves the first year, becoming tall and stately when it is in full bloom in the second year. It can grow up to ten feet tall and three feet wide. It's large, broad leaves, which resemble rhubarb leaves, are bright green with the undersides covered with white, wooly hairs. The flowers are purple and thistle-like in appearance. The burr-like fruits stick to clothing and animal fur and can be painful to remove. Burdock has a long, slender taproot that can grow up to three feet deep. It is commonly found in waste areas and is often considered an annoying weed because of its large size, clinging burs and persistent growth.
The taproot is the part used as the herb. It should be harvested in the fall of the first year, since inulin levels will be highest then. In the spring, the root is more depleted of its energy - and once the roots start to grow, they are considered too weak to be useful.
Quality: Burdock roots have a brown bark and a light tan or ivory interior. If the fresh root is damaged or cut, the part exposed to air turns dark - so good color is an indication of proper handling and drying of the fresh roots.
Burdock root powder is tan in color with a faint aroma and a slightly sweet and bitter, mucilaginous taste.

The term "cayenne" is often used to refer to any ground pepper, but true cayenne (which takes its name from the French Guinea city of Cayenne) is actually a particular type of chili pepper--about four to 12 inches long, thin, and very pungent.
Like other chili peppers, cayenne belongs to the genus Capsicum, a member of the nightshade (Solanaceae) family. Cayenne--and most other hot and sweet peppers grown in the U.S.--is Capsicum annuum, while Capsicum frutescens produces the small, thin-skinned pepper from which Tabasco sauce is made. The name capsicum may have been derived from the Latin capsa for "box" (the pepper is mostly a hollow, box-like fruit), or the Greek kapto, "to bite."
Technically, chili peppers are a fruit; once dried they are correctly considered a spice. An annual, herbaceous plant, the personality of Capsicum annuum depends a great deal on the neighborhood in which it grows up. A hot, dry environment, for example, produces the hottest chilies, while milder ones are produced in cooler, wetter climates. Even the same variety of pepper will differ, depending upon its locale.
There are several scales for measuring the hotness of chilies. What they actually measure is the capsaicin content, the crystalline, pungent substance that gives chilies their fire. The most popular scale is the Scoville Organoleptic test, which assigns a number between 0 and 300,000 heat units (the higher the number, the hotter the pepper). Cayenne typically measures between 30,000 and 90,000 heat units on the Scoville scale.
In his search for peppercorns, Columbus found "agi" pods, which the Indians used in cooking. Although technically no relation to black peppers, the Spanish called the pods "peppers," and the name stuck. Early explorers sent the seeds back to Europe, where their popularity quickly spread; soon chili peppers were commonly used to flavor bland food all over Europe. Like many cayenne lovers today, both the Edwardians and the Victorians placed chili powder shakers on their tables. Researchers are studying the pain-reducing effect of capsaicin. One theory is that capsaicin triggers pain-detecting nerves in the mouth, nose and throat, which in turn motivate the brain to release natural painkillers (endorphins). Other studies suggest that capsaicin may lower blood pressure, reduce blood clot formation, and/or prevent or heal ulcers (by stimulating the flow of digestive juices).

In 1978 Frontier bought and converted a grocery store building in Fairfax, Iowa, into a 5,200 square foot operations facility.
Subsequent growth resulted in Frontier purchasing a ten-acre parcel of Iowa farmland in 1982 near Norway, Iowa, and constructing a 21,000 square foot facility. Plant expansions in 1984, 1988 and 1993 have increased the facility size to over 85,000 square feet. Frontier now owns an additional 50 acres of land adjacent to the main facility, 22 acres of which is maintained as tallgrass prairie.
During 1988 Frontier introduced a line of packaged spices. This was followed in 1991 with the introduction of a line of gourmet, 100% certified organic whole bean coffees. Subsequent introductions included a line of herbal extracts and the first certified organic beer in the United States.
Not all of these product lines were sustained successes, but all provided greater name recognition and expanded opportunities. The Frontier brand packaged-spice line developed into a significant sales contributor and laid important groundwork for the later establishment of the Simply Organic brand. Another Frontier brand, Frontier Coffee, was a part of the company for ten years.
