Emmy's Organics' Story
Well, it all started when Samantha and Ian met in 2008 at a music festival here in Ithaca, NY where both lived. They were introduced by a mutual friend, Zia Anger, who is, in some weird, indirect way, basically responsible for Emmy’s existence.
Samantha had just graduated from Ithaca College, where she studied Theatre Arts Management and Dance. During her last year at college, she started experimenting with raw foods and developed a genuine passion for health and wellness. Her step-mother lent her a dehydrator and Samantha jumped right in (not the dehydrator, that is)! Friends and strangers began to look over at her lunches with puzzled faces. She knew she had found something that she wanted to pursue.
Ian had recently moved back to Ithaca, NY (his home town) for the spiritual and physical wellness that permeates the town. He moved from Brooklyn where he was working for a graphic design company doing flash animation. Before that he had been working as a raw vegan chef and kitchen manager at various locations in New York City, NY. Before -before that, he had done similar work with raw and vegan food in San Francisco, CA. When he wasn’t working with the types of deliciousness that would be Emmy’s, he built his reputation as a DJ and music producer. From his own experiences with food allergies and a digestive disease he developed a love for health and wellness.
So when they finally met, it was perfect. They found so much fun and joy (of course, a little love) learning and experimenting with food. Ian was living at his mother’s (the eponymous Emmy) house where they started to take over the kitchen. One night, Ian taught Samantha a macaroon recipe that he had developed back in NYC. It was so much fun and so easy that they started brainstorming. Samantha, in her typical enthusiastic way shouted, “Wow, these would look so cute in a package!” The next morning, Ian called Samantha and asked, “You want to go into business with me?” (No, he wasn’t talking about their relationship, yet).
They started making everything in Emmy’s kitchen. They worked to get the home kitchen certified, and they started selling to their local co-op and a few other local stores. They began with four flavors of macaroons. Emmy’s started getting really popular and the first few batches were selling really well. They applied to vend at Ithaca’s farmer’s market and started to pursue stores in New York City by taking a trip and pitching their stuff to store buyers. Slowly, but surely, they continued to get more orders. They moved out of the home kitchen and moved to Ian’s step-sister’s basement where they outfitted it as a kitchen and office. Their friend, Marian, started working with Emmy’s, opening new accounts and getting Emmy’s into its first Whole Foods Market region.
At this point, Emmy’s had expanded its product line and was approached by a broker who offered to do all of the selling for Emmy’s and to get them involved with multiple distribution companies. The orders grew and grew. Sam and Ian’s place in the basement was getting too small, and running huge orders up and down the stairs was not working anymore. They moved the kitchen to Emmy’s current location in August 2010, where they have continued to learn and grow. This is truly an exciting time for an exciting, young company.

Q: Doesn’t coconut and coconut oil make you fat?
A: No! Coconut is actually known as an “athlete’s fat" because of it’s fatty acid chain length. Coconut is composed of medium chain fatty acids which work with the body and are immediately converted to energy after consumption. Many years ago, coconut started getting bad press because on the nutrition label, it says that its saturated fat content is high. This is true, but it is the way that this saturated fat is comprised that makes it such a special and healthy fat. In fact, these medium chain fatty acids have been known to protect against heart disease.
Q: Are the products gluten-free?
A: Yes! Emmy's does not use any ingredients that contain gluten or wheat. Their manufacturing facility is gluten-free and they are the only company occupying the space. They can control what we bring into our prep areas. Gluten and wheat are not allowed!! They have plans to do gluten-free lab testing on our products when we have the finances to do it.
Q: What’s the deal with Agave nectar?
A: There has been a lot of bad press about agave nectar recently. There are a lot of agave companies that process their syrup with corn syrup to cut costs. Also, when agave nectar is heated at high temperatures, it can change its composition and therefore its place on the glycemic index. This is not the agave nectar Emmy's uses! They use a low-temp agave nectar from a reliable company. The agave that they buy is processed below 115 degrees, which maintains all of the benefits that agave has to offer. They have never been to Mexico to see this process happen, but we have been assured this syrup has integrity.
Q: What is vegan?
A: Vegan means made without the use of any animal or animal bi-product. Emmy's use 100% plant based ingredients.
Q: Are your products 100% raw?
A: Our Granola, Chocolate Sauce, Super-Fudge, Almond Mylk, Trail Mixes, select ingredients and specials are 100% raw. The macaroons are 98% raw – we use a small amount of low temp, steam treated blanched almond meal which is 100% non-gmo. They have received many praises from raw foodists who enjoy our macaroons. All of our their ingredients are labeled on our packaging and in our online store. Products that require dehydration are set to 115 degrees or below.
Q: What are the packages made out of?
A: All of Emmy's packages are compostable & biodegradable. The macaroon packages are made from a BPA free wood fiber and the labels are made from recycled paper. Their granola bags are made from a recycled paper as well with BPA free PLA compostable window and the bags inside are also made from wood fiber. They encourage everyone to compost and re-use!
Q: How long will my macaroons and granola stay fresh?
A: Because Emmy's macaroons and granola are dehydrated & made with all plant based ingredients, they will stay good for a very long time. They recommend a six-month shelf life at room temperature. Enjoy!
Q: Does my chocolate sauce need to be in the refrigerator?
A: No! Even after opening the chocolate sauce, it does not need to be stored in the refrigerator. It is best at a room temperature, dry environment. If you feel like your storage area might be damp, it may be best to stick it in the fridge. For a more fudgy and thick consistency, the refrigerator is the way to go.
Q: What if the macaroons seem too hard?
A: The macaroons will only be too hard if they are too cold. Simply keep them at room temperature and they should be perfect.
Why Raw?: Because not having an oven is awesome.
Eating raw food is probably one of the best things that you can do for your body. Putting uncooked (un-killed) food into your body will give you more LIFE! By not cooking your food you are maintaining the enzymes and vitamins that naturally reside in it. This way you get the enzymes, not your sautee pan! The traditional raw food diet consists of uncooked (never heated above 115 degrees) vegetables, fruits, nuts and seeds. Many people who go 100% raw for the first time feel positive physical and emotional effects due to the detox effect the diet has on your system. You literally glow from the inside out! Though Emmy's loves the 100% raw food diet and take it on as much as possible, they also believe in a combination diet. For example, eating raw food for breakfast and lunch and then adding a few cooked items to your dinner. This also works best if you are trying to incorporate many local foods too! By adding raw food or replacing some foods in your diet with raw foods (especially raw greens!), you will feel a shift in your energy and mental clarity. The other health benefits that people on raw food diets have seen are: weight loss, more energy, detoxification, boost in immune system, better sex drive, more smiling/positive thoughts and even curing terminal disease.
For all of you 100% raw friends, Emmy's would like you to know that we use a small amount (2% of our recipe) of blanched, non-gmo almond meal in our macaroons. Every other ingredient is completely raw and the product is still dehydrated at 115 degrees.
Emmy’s Organics is a gluten-free company. They take this very seriously especially because one of the owners, Ian, has been gluten free for over 12 years. They are very careful about the ingredients they use, making sure they are not processed in the same facility as gluten or wheat. In their own facility, they do not allow gluten in the production areas so there is no contamination.
Gluten has become something that people have to pay attention to these days. You may have friends or relatives that have been switching to a gluten-free diet, but why? Gluten allergies (and celiac disease) are serious. They cause major disruption in your guts, can prevent your body from properly absorbing the food you are eating and can cause symptoms such as chronic fatigue, neurological disorders, nausea, skin rashes, depression, nutrient deficiencies, anemia and more. Before the gluten-allergy became as well known as it is today, people thought that these symptoms were normal, that everyone has major bloating after they eat or severe fatigue when they wake up. More and more people are realizing their sensitivities to gluten because (and this is our theory) their bodies have become used to eating so much processed food. The amount of processed food that is consumed by our country is scary. What this does is it makes our bodies forget how to process food on their own so they begin to develop intolerances and disease. Wonder if you have a gluten sensitivity but dont know it? Try going gluten-free for a week and see how you feel. Many people feel lighter and more focused. Which makes sense, have you SEEN gluten? Its a little gross and taking that out of anyone’s intestines is bound to feel good.

The Environmental Impact:
Approximately 10 billion animals (chickens, cattle, hogs, ducks, turkeys, lambs and sheep) are raised and killed in the US annually. Nearly all of them are raised on factory farms under inhumane conditions. These industrial farms are also dangerous for their workers, pollute surrounding communities, are unsafe to our food system and contribute significantly to global warming. Raising animals for food is also extremely inefficient. For every pound of food that farmed animals are fed, only a fraction of the calories are returned in the form of edible flesh. By eliminating their factory farmed meat consumption, Emmy's can help end world hunger.
The Health Impact:
Not only is eating meat and dairy dangerous due to the growing number of foodborne illnesses such as e.coli and salmonella, but it sticks with you in a bad way. Meat and dairy are high is cholesterol and saturated fat which create plaque inside of your arteries. This can cause scary diseases including heart disease and even cancer. By eliminating these foods from your diet, you get the opportunity to incorporate more disease-fighting foods such as vegetables, sea vegetables, fruits and superfoods!
They are extremely careful about what they use for their packaging because they are committed to the amount of waste thye are producing in the world. Why? Because mishandled waste goes into a landfill. Nothing breaks down in a landfill and the more that goes into a landfill, more landfills will be created. More landfills equals less nature, more toxins and gases in the air that are linked to various degenerative diseases. If Emmy's create products whose packaging doesn’t belong in a landfill, thye can make an impact. If they can impact you to dispose of their packaging (and all other packaging) properly, they can make a huge impact:
- Macaroon packages are made from a wood fiber that composts best in a composting facility. You can put them in your backyard compost, but it will take a long time for them to break down. The labels are made out of recycled paper.
- Granola bags are made out of a recycled craft paper with a plastic window. These are best disposed when you rip out the window, recycle the bag and recycle the window separately. The inner bag is a wood fiber bag that is best composted in a composting facility. The labels are made from recycled paper.
- Chocolate sauce, nut butters and bulk ingredients are packaged in glass jars. These are intended to be re- used and we encourage you to do the same! The label is made from recycled paper.
- Trail mixes and sprouted nuts are packaged in a special zip lock bag that is compostable! These can be composted outside, in a composting facility or even better, re-used. The label is made from recycled paper.

At Emmy’s Organics, they are committed to taking care of the planet. When consumers purchase their products, not only are they supporting organic & non-gmo farming, but are also supporting a sustainable business that makes as little of an environmental impact as possible.
- They recycle all bottles, cans, aluminum and paper.
- They compost all of their food scraps.
- They use rags instead of paper towels.
- They use all eco-friendly cleaning fluids.
- They refill their soap at our local coop in a big gallon container. Then they refill that in their soap dispenser in the kitchen, which eliminates buying soap containers all together.
- They use compostable & recycled materials for their packaging.
- They use 100% recycled paper in our office printer.
- They re-use their bulk ingredient paper bags as packing material for large orders.
- They re-use agave & coconut oil buckets as compost bins, tomato planters or feed containers.
- They use re-useable cups for water (no water cooler cups!).
- They turn off our lights! Even when they break for lunch.
- When they go to the Farmer’s Market, they refill a cooler at an ice source instead of buying bags of it.
- They use all compostable cups, containers, napkins, cutlery, straws and bags at the market. That’s also because it’s a rule. The Ithaca Farmer’s Market claims almost no waste!
- They buy pre-owned tables, equipment and furniture. Gotta love craigslist!!
- They re-use plastic containers and jars.
- They’re part of a year round CSA where they bring their own shopping bags and get their vegetables from a local farm once a week.
- They bring their own baskets and shopping bags when they shop.
- They buy second-hand clothes and donate their old stuff.
- They walk, run & ride bikes to get where thye’re going.
- They bring their own lunch to work or prepare it at the office!
- They purchase a majority of our bulk ingredients from a local distribution company and they sell them their products! What goes around comes around…
