What does Namaste mean?
Many people ask us what the term "Namaste" means. They will do their best to explain it here. The word "Namaste" (pronounced "Naa-Maa-Stay") is an ancient Sanskrit word with no literal translation. After many hours reviewing all the different translations, they decided they like this one the best.
"The Spirit within me honors and respects the Spirit within you."
The word 'Spirit' in this context has no particular religious connotation. You could substitute the word 'Heart' or 'Soul' if you like. The essence of the phrase is simply that the best part of me wishes you well - in every way. In seeking to offer you delicious gluten and allergen-free foods, they nourish the body. In nourishing the body, they hope to help nourish the mind and the spirit so you can enjoy optimum health.

I liked the original baking instructions for your Pizza Crust better than the new method. Can you please give me those directions?
Original Namaste Foods Baking Directions for One 14" Pizza Crust or 4 Mini Crusts:
What You Need:
- 1 Cup Water
- 1 1/2 Teaspoons
- Olive or Other Oil
- Heat oven to 425° F. Generously oil a pizza stone or pan, then rub some on a rolling pin.
Combine 1 cup warm water and 1 1/2 teaspoons olive or other oil to 2 3/4 cups of dry mix. Beat with an electric mixer for 3 minutes on high speed. Form dough into a ball then put on your stone or pan. Roll out to about 1/4" thick.
Bake for approximately 10 minutes on lowest oven rack. (You can freeze for later use at this point.)
Add sauce and whatever toppings you like. Brush edge of crust with olive oil. If the bottom of the crust looks brown, move pizza to the middle rack and bake another 8-12 minutes. Otherwise, leave it on the bottom rack and bake. Enjoy!
What is Celiac Disease?
Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean? Celiac disease is triggered by consumption of the protein called gluten, which is found in wheat, barley and rye. When people with Celiac disease eat foods containing gluten, their immune system responds by damaging the fingerlike villi of the small intestine. When the villi become damaged, the body is unable to absorb nutrients into the bloodstream, which can lead to malnourishment.
Celiac disease is also known as Celiac Sprue, Nontropical Sprue, and Gluten-Sensitive Enteropathy. Researchers have determined that Celiac disease is a genetic condition, meaning that it is inherited. In some cases, Celiac becomes active or is triggered by events such as surgery, pregnancy, childbirth, viral infection, or severe emotional stress. Roughly one out of about every 100 Americans has Celiac disease, but 97 per cent remain undiagnosed. This means that almost three million Americans have celiac disease and only about 100,000 have been diagnosed. Left untreated, people with Celiac disease can develop further complications such as other autoimmune diseases, Osteoporosis, Thyroid disease, and Cancer.
All Namaste Foods LLC products and ingredients are, to the best our knowledge, considered to be non-GMO in that they are produced with the addition of no genetically modified organisms.
About Namaste Foods
GrassrootsWe are a small (but growing!) manufacturer of fine foods that contain no wheat, gluten, corn, soy, potato, dairy, casein, peanuts or tree nuts. In business since 2000, they continue to strive to be the best at what they do so that you can enjoy all the foods you've known and loved all your life.
Their approach has always been very "grassroots" in nature. When they first started, they didn't have the money to hire advertising firms, public relations people and expensive brokers like everyone else does so they just started reaching out to people through various support groups such as Celiac Support groups, Autism support groups, food allergy support groups and the like. They sent samples for their members to try and Voila! - people loved their products and started requesting us at their local store. And a company was born . . .
Today, they still don't do those things the 'big guys' do (because that ends up costing YOU more) and they rely heavily on what got us to where they are today, good 'ol word-of-mouth advertising. It's the biggest compliment anyone can give us and they appreciate it more than you know.
Worry-free products - Their facility contains no wheat, gluten, corn, soy, potato, dairy, peanuts or tree nuts. It is their attempt to try to eliminate any chance of cross-contamination so you can enjoy Namaste Foods products worry -free. They use NO genetically modified ingredients in any of their products and yes, all Namaste Food products are Kosher Certified. And last but not least (and they don't mean to brag BUT) AIB International, a leader in performing audits for companies in the baking industry, has given their facility a 'Superior' rating - the highest rating possible.
A better value - They know that gluten-free products are expensive. In an effort to make them more affordable for you, they continue to strive to give you more for your hard earned dollar. You will find that most Namaste Foods mixes have a significantly higher yield than their competitors'. For instance, all their cake mixes make TWO rounds as opposed to one. (Who ever heard of a one-layer birthday cake anyway?!)
Truly delicious food! - That goes without saying yet bears repeating. They work diligently to try to offer you products that make your mouth water and your face smile! They truly believe Namaste Foods products to be heads and shoulders above their competitors in taste and texture - because you've told them so!
By Daphne Taylor, Owner
It was in the fall of 1999 that a friend approached me desperate for help in creating good gluten free and allergen free foods for herself and her preschooler son. She was frustrated at the lack of good food available to them and he was sad that he couldn't eat food the 'normal' kids could eat. In my family, good food was essential - it brought friends and family together for the best of times and nurtured the soul. I couldn't imagine missing out on one of the best things in life - good food. While I was unfamiliar with Celiac Disease at that time, I knew I loved to cook and could never resist helping a friend. So, I rolled up my sleeves and went to work. This challenge was particularly perplexing as any creation must not only be free of gluten but also free of corn, soy, potato, dairy, casein, peanuts and tree nuts in order to meet my friends' dietary restrictions. No small task indeed!
As a chocolate lover myself, Brownies came first. So, I started by flipping over a box of unsweetened chocolate and looked at the Brownie recipe on the back. I made some changes based on what little research I had done and voila! As luck would have it (or maybe it was just meant to be?) the first 'go' at the perfect Brownie was also the last. The fudgey, dark chocolately taste and moist and chewy texture of that first Brownie needed no improvement. And it's still the same recipe they use today! And so it began . . .
The early days involved more experimenting on the best of family and friends. Then loading up a truck full of flour, sugar, cocoa, spices and the like and heading north to a business incubator community kitchen in Sandpoint, Idaho where they'd strap on aprons and get to work! Meanwhile, my boys Seamus and Conor, then ages nine and seven respectively, would be home at our kitchen table sticking labels from the local print shop onto cellophane bags. At a penny a label, they were happy to do it, thank goodness!
It was shortly thereafter that as coincidence (or fate?) would have it, Seamus was diagnosed with Asperger's Syndrome. In my research, I learned that many kids with Autism Spectrum disorders see improvement, sometimes significant, when switched to a gluten free, casein free diet. Now I was convinced - it was time to leave my 'real' federal job and take a leap of faith. Namaste Foods was officially born in February of 2000.
(Many people ask me why I chose the name 'Namaste Foods'. At the time, I was taking my first yoga class and each class ended with the instructor bowing her head, hands over her heart and saying 'Namaste.' Wanting to know what that meant, I learned the essence of the word means 'the spirit within me honors and respects the spirit within you.' I have always felt there is a fundamental connection between mind, body, spirit and good health. Surely all the good times they share with family and friends around food aren't purely about the food! To me, nourishing the body with good food in turn nourishes the mind and the spirit. And who needs a little 'soul food' more than people who are struggling with food allergies?)
From our humble beginnings, Namaste Foods has grown into one of the most respected manufacturers of gluten free and allergen free foods in the United States and beyond. The first few years were difficult as I juggled home- schooling Seamus (who wasn't quite ready for middle school) with waitressing nights (the 'real' federal job paid 'real' money whereas a new business eats 'real' money), being a wife and mom to both sons and trying to get Namaste Foods off the ground. What a long and wild two years that was! Using a grass roots approach and still a one-woman show, I reached out to a handful of local health food stores and wrote to support groups. Then a wonderful thing happened, people began to talk - and Namaste Foods began to grow. And it kept growing.
Today, 16 women (and my husband) work from their homes in all parts of the country to continue the success of Namaste Foods. They currently offer 15 outstanding baking mixes and 3 delectably delicious pasta meals that are distributed in all 50 states, Canada and beyond. All products are free of wheat, gluten, corn, soy, potato, dairy, casein, peanuts and tree nuts, are carefully manufactured in a dedicated allergen free facility and Kosher certified
Having been a single mom for almost five years, I understand the importance of stretching every dollar. Nearly all of their products make up to double their competitors yet their price is about the same and sometimes even less! And as the company was founded in the spirit of helping a friend, the tradition continues. Namaste Foods routinely donates to charities of all shapes and sizes as a way to 'give back' and be thankful for all of the success they have enjoyed.
Namaste Foods is actively involved in and routinely donates to groups and organizations such as CSA (Celiac Sprue Association), GIG (Gluten Intolerance Group), GIG Kid's Summer Camps, FAAN (Food Allergy & Anaphylaxis Network), AFAA (Anaphylaxis & Food Allergy Association), FACES (Food Allergic Children Education & Support), R.O.C.K. (Raising Our Celiac Kids), NFCA (National Foundation for Celiac Awareness), TACA (Talk About Curing Autism), local support groups and many more. They appreciate the opportunity to be involved with these groups in raising awareness of disease and food allergy problems and helping those with food allergies and sensitivities to enjoy a healthy allergen-free lifestyle.
