Source and Processing Navitas Naturals cacao beans are hand selected for quality, partially fermented to alleviate bitterness, and processed at low temperatures for maximum nutrient retention. Once extracted from the pod-like fruit, purified water is then used to cleanse the beans where they are peeled and partially ground to form small pieces or “nibs.” Navitas Naturals Cacao Nibs contain 100% pure cacao that is certified organic, kosher, gluten-free, vegan, and raw.
The Truth About Vitamin C In Cacao: Despite the popular reports circulating the internet, the honest truth remains: even when processed at low temperatures (i.e. "raw"), there is no vitamin C (ascorbic acid) present in cacao. Recently, highly trafficked websites such as TodayShow.com and MSNBC.com have highlighted the misinformation of cacao’s supposed vitamin C content. Included in these reports are claims that raw cacao is “extraordinarily high in vitamin C.”
Back in 2004, our Navitas Naturals lab tests directly looked for vitamin C content in raw cacao, but came up negative. Despite these results, the current media blitz brought us back again for another round of lab testing of our best-selling raw cacao products (beans, nibs and powder) for vitamin C. This time, we used two different laboratories instead of one, and utilized three different analytical methods: High Performance Liquid Chromatography (HPLC), Capilary Electrophoresis (CE) with UV detection, and Titration.
Though all three methods have their place in the scientific community, Titration is the most commonly used method in the food industry when determining vitamin C (ascorbic acid) content. However, there is a critical detail within the Titration method many companies miss when testing raw cacao. The method of Titration is unable to differentiate the vitamin C (ascorbic acid) from the vitamin’s analogs. The result is what is known as a "false positive."
This is why, at Navitas Naturals, we use HPLC when testing raw cacao’s vitamin C content. The HPLC method looks directly for vitamin C (ascorbic acid), and not just the analogs. Additionally, after sending samples of our products to another lab to test using the CE method, the reports returned consistent the HPLC results. Navitas Naturals have now also tested one of the largest raw cacao brands in the United States using the Titration and HPLC methods. And yet again the results confirm our previous conclusion that raw cacao has no vitamin C (ascorbic acid) present. Cacao is a tremendously beneficial superfood, containing a wide spectrum of minerals and phytonutrients. It is important to be clear however, vitamin C is not amongst these nutrients.
Food of the Gods Cacao has long been enjoyed for its healthful and invigorating properties in Mexican, Central, and South American cultures. Great for both the true chocolateer and health seeker alike, try raw cacao paired with sweet foods of any kind (including raw nectars and syrups, dried fruit, or as a special addition to a dessert recipe) and experience cacao’s beloved chocolate intensity instantly come to life.
1/2c.Navitas Naturals Cacao Nibs ground into a powder (use more for richer flavor)
1/2c. Pitted, packed dates
1 tsp. Cheery extract (Frontier herbs makes a nice one)
2 tsp. Eden cherry concentrate
1/4c. Dried cherried, coarsely chopped
Directions Grind the cacao nibs in a coffee grinder until powdered. Puree all ingredients in a food processor until the batter becomes emulsified. Then, refrigerate the batter until chilled, about 1 hour.
Form the batter into round balls. (You can also use candy molds for a variety of shapes, or form into a block and make thin slices.) These truffles are best refrigerated and will last for up to 6 months.
For a more milk chocolaty flavor, puree in:
1c. Soaked and dehydrated walnuts or
1/2c. Almond Butter
Variations: Add 2 tsp. fresh ginger and replace cherries with dates. Mix in a few Navitas Naturals Cacao Nibs (unground) for texture. For a more milk-chocolaty flavor, puree in 1 cup soaked and dehydrated walnuts, or ½ cup almond butter.
Recipe Crispy Chocolate Chip Cookies Difficulty: Moderate
3T. Navitas Naturals Cacao Powder
1/4c. Navitas Naturals Cacao Nibs
1/4c Navitas Naturals Hemp Powder
1/4c. Navitas Naturals Sprouted Chia Powder
2c. Sprouted buckwheat
1c. Soaked flax seeds
1 dropper Chocolate liquid stevia
3T. Roasted carob
Directions To sprout buckwheat, soak 1 cup raw buckwheat groats in 2 cups water overnight in refrigerator. Drain in colander and spread groats evenly around side of colander. Place plate underneath colander to catch dripping water. Cover with paper towel and let sprout on kitchen counter for 36 – 48 hours. When a little white tail pops out from the groats, they have sprouted and are ready. Soak 2/3 cup flax seed with 2 cups water overnight in refrigerator.
Measure 2 cups of sprouted buckwheat and combine with 1 cup of the soaked flax and place in mixing bowl. Add in Navitas Naturals Hemp Powder, Navitas Naturals Sprouted Chia Powder, agave syrup, liquid stevia, cinnamon, carob and lastly the Navitas Naturals Cacao Powder and Cacao Nibs. Combine all ingredients until well incorporated.
On a Teflex sheet, spread half the batter into a circle, approximately 10” in diameter and ¼” thick. Repeat on another sheet with rest of batter. Place sheets in dehydrator for 18 hours at 105 degrees. Half way through, peel batter off and flip over. Continue to dehydrate for another 2 hours. When finished, break into bite-size cookie pieces.
Note: If you do not have a dehydrator, place batter on a cookie sheet covered with oil-sprayed parchment paper and dehydrate in a 200 degree oven for two-three hours or until desired texture is achieved.
Recipe Chocolate Haystacks Difficulty: Easy
1/2c. Navitas Naturals Cacao Butter
1/2c. Navitas Naturals Cacao Powder
1 cup Navitas Naturals Trail Mix
3 Tbsp. Navitas Naturals Yacon Syrup
3 Tbsp.. Navitas Naturals Palm Sugar
Directions In a saucepan, melt the Navitas Naturals Cacao butter over very low heat, quickly stirring in the agave syrup and Navitas Naturals Cacao powder until smooth. Toss in the trail mix until coated, then drop spoon-size haystacks onto a plate and place into the freezer to harden. Haystacks are ready to eat in about one hour. Great for road-trip snacking!
To keep cacao butter raw, melt it by filling a glass bowl with boiling water, then placing a bigger bowl on top of that with shaved cacao butter flakes in it. The butter will slowly melt from the heat of the hot water but retain its raw state.

Well... I probably should rate this higher because it is as described. HOWEVER, not what I was expecting. I have been eating raw cacao powder once a day from the same company for several months. I helps quiet my moods and the natural caffeine helps me get going in the morning. I thought "wouldn't it be better if I ground my own!" As it turns out the answer is no. (Though it grounds perfectly in a nut grinder to a nice pulp which I have been told can be used instead of 100% cocoa bar in baking) The process from bean to powder is the removal of cacao butter. I learned something new and now maybe you have too. Next time I make brownies I will use this and see if indeed it works. But I will go back to purchasing the raw powder and enjoy the benefits of getting to eat chocolate with breakfast!
