    What is a rub?
    Any mixture of coarsely ground spices that is made for the purpose of being rubbed on food before it is cooked is considered a spice rub.

    How are spice rubs used?
    Spices are rubbed into raw food to form a coating. The food can be marinated in the spice rub for some time for the flavors to incorporate into the food or it can be cooked immediately after it is coated in the rub.

    How do I make my Nantucket-Off Shore spice rub into a marinade?
    There are few different ways to do this depending on the food you are cooking - here is what they recommend:

    • 2 Tablespoons Nantucket Off-Shore Spice Rub of your choosing
    • 4 Tablespoons olive oil
    • 4 Tablespoons vinegar (Balsamic or Red Wine work best)

    OR

    • The juice of one lime or lemon.
    • For beef, poultry, or pork, they suggest using vinegar; seafood and veggies work best with citrus.
    • Combine all ingredients in a bag or bowl, add 2 to 3 lbs of fish, poultry, beef, or vegetables. Set in your refridgerato r to marinate. How long depends on what you are marinating. Fish and veggies absorb marinades the fastest so no more than 30 to 60 minutes is needed; pork and beef need at least one to two hours to really absorb the flavors but can go overnight if the cut of meat is thicker. Chicken is the easiest to marinade, with flavors developing within the first half hour of marinating and developing further the longer you leave it, so it can be prepared the night before a meal.

    Suggested Use

    For blackening and grilling, rub each pound of uncooked food with 1-2 Tablespoons of Bayou Rub. Add wet marinade ingredients if desired. Use as a seasoning in Cajun and Creole recipes.
