There are two basic types of enzymes involved in the digestive process: those that are produced by our bodies and those that are present in raw foods. In 1965, Flora began its North American operations in Burnaby, British Columbia, and is currently owned by natural health visionary Thomas Greither. Flora grows most of its own herbs on farms in Washington and Chile and purchases the rest through fair trade practices from organic farmers. "We are one of the very few companies who actually grow our own herbs," says Thomas Greither. "If we buy from another farm, we know what seed they used, and we always receive the herbs in the whole form. You can tell if it was dried properly and handled properly. Most companies buy them powdered. We have a whole grinding department. Each herb needs a different cutting mechanism, and we cut them just before manufacturing. With essential herbs, if I grind them a half a year before manufacturing, that would not be as effective. Sometimes the industry gets a bad name because of the use of these dried herbs. Essential oils oxidize out of the product. For example, in our teas, we have a special vapour moisture barrier so the essential oils from the product can't evaporate; it preserves freshness."
The certified organic farm in Chile lies on 1500 acres of land that has never been intensively farmed, and was thoroughly tested before cultivation began to ensure it was free of pollutants such as chemical fertilizers. The farm is set in a pristine paradise cut off by the deserts in the north, the waters of the Antarctic in the south, the Andes (with a height of 5,500 metres) in the east and the Pacific Ocean in the west. Udo Erasmus is an international authority on fats, oils, cholesterol and human health.
Udo received his B.Sc. in Honours Zoology from the University of British Columbia and followed this with graduate studies in Biochemistry and Genetics. In 1980, his life took a significant turn when he was poisoned by pesticides. When conventional medicine was unable to provide help, he concluded that his health was his own responsibility and turned his attention to nutrition. Several years of research culminated in his bestselling book, Fats that Heal Fats that Kill, which earned him a Ph.D. in Nutrition.
In 1983, he began to pioneer technology for pressing and packaging edible, fresh oils made with health in mind, by excluding the three main factors that transform nutritious oils into toxic ones – light, heat and oxygen. Until that time, oils were highly processed by destructive methods, sacrificing health benefits in order to attain longer shelf life.
