Pu·erh (pu-er) is an ancient healing tea picked from 500 year old organic wild tea trees in the majestic mountains of China's Yunnan province. Pu·erh’s history began over 2000 years ago when tea was transported along five Tea Horse Roads’. The first and most traveled road began in the village of Pu Erh. In order to maximize their load, merchants compressed the tea, and to their surprise, the tea tasted better at the journey’s end and yielded additional health benefits. Pu·erh is processed differently than traditional white, green, oolong, and black teas. Pu·erh undergoes a unique fermenting process: once picked, the leaves are piled, dampened, and turned, over a 60-day period. The tea is then dried and ready to be compressed into bricks for additional aging, or left as loose tea, which Numi uses in its tea bags. The resulting taste is rich and smooth with hints of malt - a great alternative to coffee. Health & Vitality
The roots of these mature trees gather minerals from the earth. The unique fermentation process then acts on the nutrients that already exist in the tea leaves. Pu·erh has been purported in Chinese culture to aid digestion and metabolism, maintain healthy cholesterol levels, naturally boost energy (without the jitters), and along with a healthy diet and exercise, help with weight management.
Tea is one of the few beverages naturally containing caffeine and has been enjoyed for millennia as an enlivened boost with focused clarity. Unlike coffee which is absorbed quickly and can cause unpleasant jitters and an afternoon crash, the caffeine in tea provides a gentle and sustained energy balanced by the calming effect of theanine, another compound found naturally in tea leaves. This unique combination makes tea the perfect beverage to enjoy throughout the day.
A 6 to 8 ounce cup of tea generally contains between 15 and 70 milligrams of caffeine. Remember, 8 ounces of brewed coffee has a range of 95-200 milligrams, so you can be sure that your cup of tea will always be lower in caffeine.
They’re asked all the time how many milligrams of caffeine are in a particular tea, and the honest answer is: they don’t know for sure! The environment each year, location of the bush, processing style and method of steeping all has an effect on the amount in your cup, so they can only provide a range.
They use the lower, medium, high and higher caffeine labeling on their package based on past tests and the proportion of tea to ingredients in each blend. Their decaffeinated teas have 99.9% of the caffeine removed with a beneficial process known as effervescence that leaves no-residue and preserves the antioxidants.
Herbal teasans are derived from a variety of plants and herbs that naturally do not contain caffeine and are thus caffeine-free. One exception is the south American beverage Yerba Mate which contains a caffeine content comparable to coffee.

Tea Leaf Quality
When describing the size of tea leaves and their origin, a term called OP, or Orange Pekoe is used. This term has nothing to do with the taste of orange. Rather, Orange refers to the Dutch noble House of Orange-Nassau, which brought tea to Europe during the 18th century. While, Pekoe refers to the top bud of the tea plant. To be classified as Orange Pekoe, the tea must be composed purely of the top two leaves and bud of the tea plant.
Numi's tea bags are comprised of fuller tea leaves of the Flowery Orange Pekoe grade or higher resulting in a smooth, rich flavor yet without the astringency you may find in most teas.
Tea Leaf Quality Matters
After being picked, tea leaves are placed in meshes to sort out their sizes. Fuller leaves stay in the top meshes while broken or crushed leaves (“Broken Orange Pekoe”) fall to the bottom. The tiny remnants of the sorting and/or crushing process result in fannings (because they are ”fanned” away) or dust (swept from the bottom). Because the surface area of these particles are smaller, tannin (natural in tea) is released quicker (after 1-2 minutes) often resulting in a bitter or astringent taste.
A larger leaf has a broader surface area and thereby can be steeped longer before tannin is released (3-5 minutes). This results in a fuller, smooth flavor. 90% of tea bags are made of dust or fannings while Numi tea bags are made of more premium quality tea leaves.
The Numi Story
After spending many years apart traveling the world and pursuing interests in art, brother and sister Ahmed and Reem Rahim met up during a family vacation to the Grand Canyon and discussed starting a tea business. Ahmed had been living abroad and had owned and operated teahouses in Europe while Reem had been studying art in Northern California. They wanted to create an entity that would encompass both of their passions. In 1999, after observing that competing brands in the U.S. tea market differed little from one another in quality, consistency, and selection, Numi was created in a tiny 750 sq/ft apt in Oakland, CA. Inspired by art and exotic teas, Reem and Ahmed created a company whose hallmark is super-premium, organic and Fair Trade Certified teas and herbal teasans made with 100% real ingredients.
Ahmed and Reem named their company Numi after the Middle Eastern dried lime teasan that they drank as children in Iraq. Traditionally harvested and dried in the hot desert sun, this rare dried lime is steeped in hot water and has been enjoyed as a tea for centuries (Numi in Arabic means citrus). Numi has a distinct, tart citrus flavor and is an oasis of health.
While the tea inspired both the creation and naming of their company, they have come across several iterations and meanings from around the world for these resonant two syllables.

They are committed to supporting non-profit organizations that are doing incredible work in their communities. While they donate to organizations that support the environment, K-12 and college education and health related issues, they as a tea’m also strive to do their part within their own community.
Numi also supports their Community through volunteerism. They give their employees four paid hours each month to volunteer for a non-profit in one of four areas: the environment, food (such as promoting organics), social services, and education. Additionally, they plan a half day each quarter where they all take part in an activity to benefit a local non-profit.

Fair Trade Certified
Numi is a leading brand purchaser of Fair Trade Certified teas, with more than half of their blends (and 80% of the raw ingredients they purchase) bearing the Fair Trade Certified label. Fair Trade guarantees farm workers are paid a minimum fair wage for their labor and empowers them to lift themselves out of poverty by investing in their farms and communities. At these gardens, the worker community votes democratically on how Fair Trade premiums are used to invest in education, health, protecting the environment, and developing the business skills necessary to compete in the global marketplace. Some programs include: new roads, cooking stoves, mosquito nets, new schools, college scholarships, enhanced maternity benefits, onsite medical staff and life insurance.
Fair Labor Practices
Verified Fair Labor is a new ground-breaking, third-party verified program designed to improve the working conditions throughout a product's entire foreign supply chain. Numi is proud to launch this standard with their collection of organic pu-erh teas.
At Numi, they believe in creating and supporting programs that benefit farmers and workers for all of their overseas partners and it is their aim to incorporate third-party certification into the entire line of Numi Organic Tea products. However, even with products that are not officially certified, they build direct relationships with their farming partners to ensure quality and consistency of products, the fair treatment of workers, better working and living conditions, and an overall improved quality of life for families and communities. Since their initial product launch in 1999, they have made it a priority to source exclusively from suppliers who ethically support their workers.
Rooibos & Flowering Tea™
From Numi’s beginnings in 1999, they have worked with the same small-scale, organic rooibos farmers in the Northern Cederberg mountain range of South Africa. This long-standing partnership has brought economic benefits to this remote region of Africa: the cooperative farming model enables workers to become shareholders, ensuring a better future.

Through thoughtful choices, they are committed to reducing their impact on the planet. By using organic teas in their tea bags, eco-responsible packaging and partnering with green partners to offset carbon emissions, they try and do their best through their supply chain to minimize waste. They are honored to be recognized through various awards for their efforts. Since most elements of their packaging can be recycled or composted, they ask that you thoughtfully recycle your boxes and compost your tea bags to complete the circle.
Numi Organic Tea’s award-winning sustainable packaging uses the most innovative materials available to minimize impact on the environment. They use recyclable, cardboard outer packaging made of 85% post-consumer waste and printed with soy-based inks. They do not use plastic shrink wrap, and they use natural, biodegradable filter-paper tea bags rather than nylon or GMO-origin tea sachets. Most elements of their packaging can be recycled or composted!
The bottom panel of each box of Numi Organic Teas features an Eco-Responsibility Audit that reflects the waste reduced due to their eco-responsible efforts. This audit is performed using the Environmental Paper Network’s Paper Calculator.
As with all intensively farmed crops, conventional tea is routinely treated with a broad range of agricultural chemicals that are potentially harmful to farmers, farm workers and the environment. As opposed to most produce that is washed prior to consumption, most teas are air-dried without first being washed. The first time tea comes into contact with water is in our own cups, right before we drink it. This means that any harmful chemicals used at the gardens are released in our cups along with the tea flavor.

Solar production facility
They co-partner with Traditional Medicinals located in Petaluma, California to bag over half of their teas. This are their primary production facility and installed 1,450 solar panels in 2009. These panels generate more than 430,000 kilowatt hours per year.
Carbon Offset Initiative
With the interest of reducing carbon emissions wherever possible, the Numi tea’m has been tracing supply chain outputs since 2009. They carefully monitor the impact of the logistics for transporting their raw materials from all over the world as well as travel and have conducted annual emissions audits. They then purchased an equivalent amount of carbon offsets and renewable energy certificates (RECs) through Big Tree Climate Fund. They hope to offset their carbon output by 100% to be a zero impact business by the end of 2012 and are in the process of enlisting a new partner to help them with this process.
Numi is a Founding B Corporation. Certified B Corporations are purpose-driven companies that create benefit for shareholders, employees, the community and the environment. The Certified B Corporation label helps consumers tell the difference between a "good company" and just good marketing. Numi surpassed the minimum score on B Corporation's B Ratings System, which assesses a company’s social and environmental performance, by more than 20 points. At Numi, they consider the interests of their employees, suppliers, consumers, community and environment integrally in their business practices; the B Corporation Ratings system allows them to measure their impact on each of these key stakeholders and improve their performance over time.
Choice of Water
The perfect cup of tea begins with fresh and clean water. To preserve the delicate nuances of tea’s flavor and aroma, it is best to avoid using tap water which can contain chlorine and fluoride. Instead, opt for filtered water and spring water for the perfect brew.
Method of Steeping
If you are brewing tea from loose leaves, they recommend using two grams of tea per six ounces of water, or one heaping teaspoon per cup. If you are using a lighter, bulkier tea like a spring white or tippy black, a larger amount by volume should be used. Try a tablespoon per cup. While steeping loose leaf it is important for the water to flow freely through the tea. Tea balls can constrict and break the leaves, resulting in a weaker cup. Try using a basket-filter, tea sac, or even letting your leaves free in the bottom of the pot and filtering the infusion when the steeping is complete.
Water Temperature and Brewing Time
These general recommendations for water temperature and steeping times provide a good starting point for brewing an unfamiliar tea. Over time, you may find that you like to use warmer temperatures times for one varietal, while cooler water and a longer steeping works best for another. Only experimentation and tasting will determine what you need for your perfect cup.

Steep 2 teabags of your choice of Numi Tea in a heat resistant glass/cup in 8 oz. hot water for 5 minutes.
