About Ethical Bean Coffee

In 1999, Lloyd Bernhardt and Kim Schachte took a trip that changed their lives. Their journey to Guatemala to adopt their daughter sparked a passion for the culture of the country and inspired a desire to better the lives of the farmers and families living and working in the coffee industry. The couple returned to Vancouver and, in 2003, launched Ethical Bean Coffee. What began as a small operation with one employee has since grown to operate out of a 10,000 square foot facility in East Vancouver, employing 26 people. And while they have expanded, both Lloyd and Kim have stayed true to their original commitment to make their coffee both just, and better. This applies not only to their product but also to the workplace and the community.

The Roasting Process

Roasting, at its simplest, is to develop the coffee with a constantly increasing temperature. Brought up too quickly, the coffee will scorch and acquire off-flavors from uneven development. Brought up too slowly, the coffee will bake and simplify, turning a vivacious cup into a wallflower.Their instrument of choice is a 45kg Diedrich drum roaster. The American roaster with the German name, handcrafted in Sandpoint, Idaho, it is a modern riff on an old school classic. It take 14 to 16 minutes for the magic to happen with each batch they roast. The magic involves tweaking the fuel and feathering the airflow to juggle radiant, conductive and convective heat. Achieving a balance is a subtle tight rope act of looking for and finding "just right". Successfully executed you'll taste a cup with clarity, vivid flavors and a sugary sweet palate. A little bit of them and a lot of what happened on the farm.

Green Coffee Selection
Raising coffee begins with the selection of green coffee. They use importers exclusively in this process for the incomparable breadth of selection, impeccable logistics and the insurance that they get what they pay for. If the coffee contracted isn't right, they don't but it and they don't take delivery. It ensures that the absolute best stuff is in their bags. No exceptions.What they look for in their green coffee selection if for fundamentally sound coffees that deliver a clean, consistent and sweet cup that will fit the profile and purpose they've destined them for. They buy the best damn coffee they can find, dancing the slow dance between perfection and necessity.

The Secret to Roasting Coffee
A quick primer on green coffee selection is relevant with respect to roasting in that it brings them to the crux of roasting coffee. Are you ready? Now this is an important and rarely shared. The secret to roasting coffee is - to start with great green coffee. That's it, that's the most important thing.

The second is to bring humility to the roasting process and look to influence the coffee with a light touch that develops and presents a coffee with as much of the integrity that the coffee arrived at the roastery with. A standing ovation for the farmers would not be out of place at this point. They're nowhere without them - their critical care, attention in nurturing and ability to deliver the amazing coffee that they roast. Ultimately, all the hand wringing, seriousness, and reflective consideration the roasting process entails serves no other purpose than to be of service to the end goal; the delivering of a taste experience in your cup that although hard to express, equals something as profound as NUMMY and leaves you simply thinking, "What a great cup of coffee".

Ethical Bean Coffee roasts only certified organic, shade grown coffee that's better for farmers and better for the environment.

What makes a coffee organic?
Organic coffee farmers around the world are defined by their creativity and resourcefulness. From developing methods of composting to signature fertilizer recipes that blend everything from coffee pulp and poultry manure to household organic waste. Harmful pesticides and herbicides are kept out of reach of the food chain, protecting farmer's health and the health of the environment for generations to come.

Shade grown benefits
Coffee grown in the shade grows slower, is more sustainable and just plain tastes better than coffee grown in full sun. Mixed crops grown in the canopy above the coffee provide farmers with food and a diverse ecosystem that is home to a variety of birds and wildlife.

Certified organic every step of the way
The fact that Ethical Bean is a Certified Organic Food Processor is a point of tremendous pride for them. This means that, in addition to buying and roasting only certified organic coffee, all their manufacturing, packaging, cleaning and maintenance must meet the stringent standards of the COR or Canadian Organic Regime. Their plant is physically inspected on an annual basis by their certifier.

Ethical Bean Coffee Questions & Answers

How is the Decaf coffee processed?
They use only 100% chemical free, water decaffeinated coffee that was prepared by the Mountain Water Process. Their process uses water to remove the caffeine from the coffee. The result is coffee that is delicious and 99.9% caffeine free.

Do you only sell whole bean coffee?
They have long been passionate about a great cup of coffee and believe that the small but significant extra step of grinding the coffee fresh is worthwhile and encouraged. That said, they understand that your quest for convenience may not include a grinder and want to ensure that their Fairtrade and Organic coffees are available as widely as possible. They are happy to offer their Rocket Fuel, Bold, Lush, Classic, and Decaf roasts in 227g packages.

Do they sell green coffee?
No, they don't sell green coffee.

I don't have an espresso machine, can I use the Sweet Espresso in my drip machine?
Absolutely. It's a great blend and shows well when used to brew a cup of drip coffee as well as when used in an espresso application.

I only have an espresso machine, can I use any coffee to make espresso?
Yes and no. Think espresso as a process of brewing marked by the brisk preparation and it's focused flavor. In theory you can use any coffee to be prepared as espresso. The qualification is that it may or may not taste great. Espresso blends are created with particular coffees, often roasted and blended in a particular way to taste great when prepared specifically as espresso, a process that makes some unique demands on the coffees used. It's very intentional. Grinding up any old coffee, roasted any old way and pulling it through the espresso machine is more of a lottery.

Where do I find the roasted-on date?
Two places. The first date is on the back label, right beside the QR Code, printed vertically: Roasted on: month, day, year. The second is by scanning the QR Code with the Ethical Bean iPhone app. Ta-da, the very first line below the image of the coffee you just scanned indicates the "Roasted On" date. Those of you who eschew the iPhone way of life can see the same information by entering the Lot code, located on the bag just below the QR Code, where prompted on their website.

Where can I find the best before date?
The best before date is found in one piece and one place only. To go there scan the QR Code with your iPhone or enter the Lot code of your bag on their website. It is indicated as "Enjoy by" just below the "Roasted On" date.

How should I store my coffee beans?
Don't do it. Don't even think about it. Coffee fresh from the roaster is in freshness free fall. The sooner that you can brew and enjoy the coffee, the better. There is a legacy of suggested storage etiquette with coffee. That it lasts for x number of day after being roasted or that you can lengthen it's life span by storing it in the [blank]. These might make you feel better but are best ignored. Buy it. Brew it. Use it. Repeat.

Can I recycle the empty coffee bag?
Sadly, no. They're all looking for solutions in the coffee industry. They've done research in-house and have been involved in studies for some new and alternative coffee bags that maintain the integrity of the coffee to the same level that their current bags do while being more sustainable. So far nothing. This is a high priority for them. They want to incorporate an environmentally sensitive bag solution just as soon as they can. In the meantime, you can give them back your used foil-lined coffee bags - theirs and those of their competitors - and they'll store them until they find a viable way of upcycling or recycling them.

Suggested Use
For absolute freshness, grind your beans just before brewing. The ideal ratio for a great cup is two tablespoons of ground coffee for every six ounces of water. Bring fresh, filtered water to a boil. Let it stand about 30 seconds before introducing it to your coffee.
