Gluten Free
If you have been led to a gluten-free diet, you are not alone and you have not gotten there because your body is defective in some way. They were told by a scientist in Italy that has devoted his studies to gluten intolerance that everyone is unable to digest gluten to some extent-some more than others. Achieving high levels of gluten in modern hybrids has been a goal of plant breeders over the last century. It does not seem surprising to us that modern wheat varieties with higher levels of gluten have coincided with a sharp increase in wheat intolerance and Celiac Disease. Gluten is what makes wheat different from any other grain. Gluten is a protein, making up close to 80% of the total protein content of wheat, which gives dough stickiness and is preferred for bread and pasta production. Put simply, gluten sensitivity is caused by the inability to break down wheat protein or gluten during digestion. Large proteins remain undigested in the small intestine, creating inflammation. This creates damage to the walls of the intestines and the inability to properly absorb nutrients. As more and more undigested proteins become present over a period of time, the body's immune system eventually begins to see them as invaders and starts to fight them with an autoimmune response. Einkorn Genetics
The natural genetics of wheat are more complicated than that of most other plants. Wheat is a unique grain because it contains gluten, which gives dough the ability to rise better when leavened. Einkorn has always remained the purest form of wheat. Like einkorn, most plants are diploids, which mean they have one set of chromosomes from a male parent and one from the female parent. When other species of wheat were created, additional sets of chromosomes were added. Emmer wheat was created roughly 2,000 years after einkorn by the hybridization of two wild grasses adding two sets of chromosomes. Kamut™and Durum Wheat are descendants of Emmer. Spelt was the first wheat hybridization that occurred with the help of man between cultivated emmer and a wild grass, creating a species with six sets of chromosomes. Q: I would like more information about their 100% compostable packaging material.

The inner bag and windows of their packages are made from FSC wood-pulp and are fully certified to the European (EN13432) and American (ASTM D6400) norms for compostable packaging. This material is suitable home composting and will typically break down in just a few weeks and is also biodegradable. Additionally, the production has gained CarbonNeutral™ accreditation. Similar materials are principally made from raw materials such as corn, potatoes or wheat. They have selected their material because it is produced from wood pulp that is sourced from managed plantations, having a lesser impact on the environment and avoiding the possible use of Genetically Modified Organisms. This material is not made of plastic and is not suitable for standard plastic recycling.

Q: I followed their cooking instructions, but the pasta did not turn out so perfect?
A:
Be aware that their first batch of einkorn rigatoni and penne listed the incorrect cooking time on the box. Please cook these two items for 13 and not 10 as listed. Cooking times vary and depend on their stove and climate, so please taste for doneness to be sure the texture is right for you. For better tasting brown rice pasta, be sure to maintain the cooking water at a rolling boil.

Q: Does einkorn contain gluten?
A:
Yes, einkorn is a species of wheat and does contain gluten. Although einkorn gluten may be more digestible than modern wheat, if you are avoiding gluten in your diet for health reasons, please try their delicious gluten free products as a tasty alternative.

Q: Are Jovial products certified Kosher?
A:
At this time, only their pasta products are certified kosher by OK Kosher. They can provide a certificate upon request.

Q: I am a vegan. Which products are suitable for me?
A:
Jovial Brown Rice pasta and Einkorn pasta are both suitable for vegans. Einkorn is an excellent source of b Vitamins and trace minerals. They do sell one cookie that carries Vegan certification, it is called Crispy Cocoa, and is made with einkorn wheat.

Q: Do their foods contain genetically modified organisms?

The Disappearance of Traditional Food Varieties

A trip to Italy as a teen introduced my American taste buds to heirloom foods. It was the first spoonful of a homemade apricot jam, made from the fruit of an age-old tree that spoke to me in a profound way. On that same beloved trip, I plucked fresh figs from a giant tree and their once in a lifetime flavor mesmerized me.
