About Pamela's Products

When we think of bakeries we dream of the delicious treats of childhood, of cakes and frosting, cookies and pies but for me it was awful tasting allergy cookies and heavy whole grain breads. My grandparents started one of the first health food stores (and bakery) in San Francisco. Growing up in the Health Food Industry, I was given the “weird” food to take to school by way of heavy, nutty breads and small, dry health food cookies or with carob instead of chocolate. No one wanted to trade food with me! I spent my summers in my family’s bakery, packing rice and soy cookies for people with special dietary needs. Although these dry, tasteless cookies were in high demand, they were not particularly appetizing. At a young age, I could relate to those who had to eat these “weird” foods. I imagined life with food allergies and without the joys a great chocolate chip cookie. I pondered my own enjoyment of cookies and food and contemplated what life would be like if all I could eat were the rice and soy cookies I packed everyday.

    How should I store the baking mix once I open the bag?
    They recommend storage in an air tight container, like a zippered bag, plastic food container, or fold down the top of the mix bag and seal with a clip.

    Is the Baking & Pancake Mix dairy-free?
    No. Their Pamela's Baking & Pancake Mix contains cultured buttermilk. For a complete list of their non-dairy products and all potential allergen ingredients they use please visit their "Allergy Information" page.

    What does the "K" on your baking mixes stand for?
    The "K" designates that their products are under Kosher supervision.

    What does the "OUD" stand for on the cookies? Does the "D" in the OUD mark mean there is dairy in the cookies?
    The "OU" part of the kosher mark on their cookies designates that these products, including the facility that they were produced in, are certified by Orthodox Union. Since butter (a dairy product) is in some of their products, the entire facility is designated as a "dairy" facility. Kosher law mandates that everything made on equipment that makes products containing dairy/milk will be designated with the "D", even if there are no dairy/milk ingredients used in that product. This means that many of their non-dairy products will carry the "D" designation even though they contain no dairy ingredients.

    Where does your Palm Oil come from?
    Pamela’s Products uses palm oil sourced from Spectrum Organics. Spectrum chose to partner with DAABON Organic, a company committed to being stewards of their community and the planet. DAABON’s farms are located in the northern Caribbean coast of Columbia on the western slopes of the Santa Marta mountain range. All are certified in accordance with international third party certifying agencies and have obtained social and environmental certification through such organization as S.A. 8000, Eco-Cert, Proforest and Bio Suisse. It’s clear that DAABON is proud of their role in creating a sustainable model for the palm industry.

    Why do you have "non-dairy" on the package, but in the ingredients it states it may contain traces of dairy?
    Products designated as "non-dairy" have no dairy ingredients, but products that do contain dairy are produced on the same machinery. They cannot guarantee that their products are completely free of any trace of dairy.

    Why does it say that your chocolate chunks may contain milk protein?
    Their non-dairy, dark chocolate chunks are produced on the same equipment as milk chocolate. They want people with a severe milk allergy to have this information. For a complete list of potential allergen ingredients they use please visit their "Allergy Information" page.

    In 1988, after college I left the family business to start my own independent company founded on the premise that wheat-free and gluten-free foods can taste great and that everyone should have food delicious enough to celebrate. My company, Pamela’s Products, continues to lead the industry with award winning decadent and delicious gluten-free foods. Much has changed since those days; Health Food, is now called Natural Food and most people are concerned about nutrition and taste equally. Although my company is part of the Natural Food Industry I have always strived for something better, something different.     Suggested Use

    Pamela's Pancakes:

    Ingredients

    1 cup Pamela's Baking ; Pancake Mix
    1 large egg (or equivalent of liquid egg replacer)
    3/4 cup water
    1 tbsp oil

    Directions
    Yield: six, 4-inch pancakes

    Mix all ingredients together until there are no lumps. Batter should not be too thin or too thick; add additional water if needed. Pour 1/4 cup batter onto a preheated, lightly oiled griddle (medium-low heat). Cook until golden brown, flipping once. Serve immediately.

    Extra pancakes can be cooked, cooled, then wrapped in plastic wrap and frozen. To reheat, remove wrapping and microwave wrapped in a paper towel until hot, approximately one minute per pancake.

    Suggestion: Use a pizza cutter to cut pancakes up for small children.

    Variation:
    Apple Pancakes:
    Add 1/4 cup sugar, 1/2 teaspoon ground ginger, 1 teaspoon ground cinnamon, 1 teaspoon vanilla, 1 grated Granny Smith apple (about 3/4 cup) to pancake recipe above and cook as directed. Add additional Pamela's Baking & Pancake Mix if needed. Serve with warm maple syrup, or sprinkle with powdered sugar.
    Berries &/or sliced fruit: Add berries or sliced fruit to pancakes on the griddle before flipping. Bake as directed above. Serve with warm maple syrup, or sprinkle with powdered sugar.

      I recommend this product!
      I have just started using this and am very pleased with it's taste. I purchased it because my daughter has found out that she has celiac disease.
