The vegetable fat in fake chocolate is an unhealthy saturated fat that can raise bad cholesterol (LDL) above normal ranges.

The fake chocolate coated snacks substitute vegetable fat, usually palm oil, for cocoa butter, which raises the melting temperature above body temperature, thus the chocolate doesn’t melt in your mouth creating a waxy texture and an overly sweet taste. Real dark chocolate homogenously melts at 89 – 93 degrees, below body temperature, exploding the dark chocolate flavor as it melts.  That’s why NuGo Dark chocolate coated protein snacks are so tasty compared to the competition.

Cocoa butter, the natural source of fat in real Dark Chocolate, is responsible for its smooth, creamy texture. Cocoa butter does not counteract the cholesterol lowering benefits of the cocoa bean – it is a neutral fat. The natural fat in chocolate, cocoa butter, is comprised of equal amounts of oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. Why would companies coat their snacks in fake dark chocolate?

They substitute vegetable fats (usually palm kernel oil) for cocoa butter in order to save money. Real dark chocolate must be tempered, and tempering takes time, costs money, and requires expertise. Making and transporting real Dark Chocolate requires the extra costs associated with climate controlled distribution.

Palm kernel and other vegetable oils raise the melting temperature of chocolate, therefore, they save money by not using climate control trucking. The higher melting temperature creates a waxy consistency and too-sweet taste because the chocolate doesn’t melt in your mouth.

How does eating snacks coated in fake dark chocolate affect cholesterol?

Vegetable fats have disadvantages that go beyond flavor. They are unhealthy saturated fats, outweighing the natural benefits of the cocoa bean. This means that replacing the neutral fat cocoa butter with palm kernel oil cancels out the health benefits found in the non-fat cocoa solids.

How can you tell if a snack is made from real Dark Chocolate?

To date, the FDA has not mandated a standard of identity for real Dark Chocolate. This means companies using alternative vegetable fat coatings instead of real Dark Chocolate can mislead consumers when they label a flavor “dark chocolate,” even though it does not contain the health benefits or taste of real Dark Chocolate.

If you want to be sure you are eating the best tasting and healthiest chocolate on earth, check your labels! By law, if vegetable fat coatings are used, the ingredients list must state “chocolaty” or “chocolate flavored coating and vegetable oil.” That is the only way you would know it is not real dark chocolate. Sometimes the listing will illegally state dark chocolate coating. If the ingredients include alternative vegetable fats (palm oil, palm kernel oil, cottonseed oil, etc.), then it is not real dark chocolate.

In a pinch I order these. Flavor GREAT! Proteins Great! Sugar low but I prefer Stevia but happy to see No Sugar Alcohol!. They also have fiber which lowers the Carbs count! The bars are just a little dry and texture hard so I don't order as many as those with Stevia. Price is lower than some others which helps! I've bought in stores and ordered and both have a whiteness like a water mark on a table on bar that bothers me but I have never called to ask about it.

I love the taste of these bars and the fact that they are filling and satisfying. However, I recently contacted the manufacturer and was very disappointed to find out that they contain GMO soy!! I hope NuGo will reconsider and change to non-GMO soy!
