Bob's Red Mill - Arrowroot Starch/Flour All Natural Gluten Free - 20 oz. (1 lb 4 oz / 567 g)

Bob's Red Mill All Natural Arrowroot Starch/Flour is gluten free. Arrowroot Starch is used as a thickener. Arrowroot received its unusual name because the root of this South American plant was used in the treatment of poisoned arrow wounds. Arrowroot is made from the dried root of a tropical plant. It is a thickening agent that may be used in place of cornstarch. As a thickener, it can be used for soups, sauces and puddings. It has no flavor of its own and is the easiest starch to digest. Arrowroot is best used at the end of your cooking just before boiling, as continued heating will cause it to lose its thickening ability. It is also an excellent ingredient for gluten-free baking or breading.

Frequently General Product Questions

Do you have any dairy/casein free products?
Yes. The majority of Bob's Red Mill products are naturally dairy and casein free. Their line of gluten free products is dairy and casein free. All of their flours, cereals and grains are also dairy and casein free. Bob's Red Mill does have a few regular mixes which do contain dairy (and casein) and they encourage you to check the ingredient list on the label to be sure.

Can your baking mixes be made with dairy and egg alternatives?
Yes. All of their baking mixes can be prepared with egg or milk alternatives.

Where are Bob's Red Mill grains, beans and seeds grown?
Bob's Red Mill's raw ingredients are sourced from farmers throughout the United States and Canada. Occasionally, ingredients are not available in North America and they look internationally for these items.

Are Bob's Red Mill products genetically modified?
No. All of Bob's Red Mill products come from identity preserved seeds. This means the seed planted in the ground is non-GMO. Bob's Red Mill simply can't guarantee against cross pollination due to natural occurrences such as wind drift, so they do not label their products GMO-free.

Do Bob's Red Mill products have additives or preservatives?
No. Bob's Red Mill products do not contain additives or preservatives and all ingredients are clearly marked on their labels.

How should I store my products?
Bob's Red Mill products are best kept refrigerated or frozen in airtight containers. They strongly recommend refrigerating or freezing the following products due to their perishability: flaxseed meal, organic flaxseed meal, golden flaxseed meal, almond meal, hazelnut meal, wheat germ and active dry yeast (do not freeze).

How long can I use a product after the "Sell By" date?
If stored properly in an airtight container in the fridge or freezer, a product can be useable 4 to 5 months past the "Sell By" date printed on the package. Because of the high oil content, whole grains can spoil easily. Bob's Red Mill recommends using the old adage, "when in doubt, throw it out."

Are Bob's Red Mill's products certified kosher?
Yes. All of their products are certified Kosher by Rabbi Avrohon Teichman of Kehilla Kosher of Los Angeles, CA.

Are Bob's Red Mill's products certified organic?
Bob's Red Mill does offer a wide selection of organic products certified by Quality Assurance International. Make sure the product is clearly labeled organic, as some items are available both organic and conventional.

Can I get recipes for products?
Yes. To view Bob's Red Mill recipe collection, visit their website.

How do I modify a recipe for high-altitude baking?
Here are some basic steps for high-altitude adjustments:

  • Baking Powder: Reduce each teaspoon by 1/8 to
  • Sugar: Decrease each cup by 1-2 Tbsp
  • Baking Soda: Reduce just like Baking Powder
  • Fats: No adjustments needed
  • Oven Temperature: Increase 25 degrees F
  • Cooking Time: Increase Slightly
  • Mixing: Be careful not to over mix. Do not over beat eggs.
  • Cookies: Usually no adjustments needed.
  • Yeasted Breads: Decrease the yeast by 1/4 tsp. Use less flour per cup of liquid. Yeast breads rise more quickly at higher altitude, so watch carefully.
  • Bake at higher temperature, for less time.

Does the nutritional information refer to dry or cooked product?
All of their nutritional information reflects the dry, unprepared product.

Are Bob's Red Mill's baking soda and baking powder aluminum free?
Yes. Their baking soda and baking powder are aluminum free.

Is Bob's Red Mill's sea salt iodized?
No. Their sea salt has been refined, but it has not been iodized.

What is the difference between rolled oats, Scottish oats and steel cut oats?
They offer cut oats and rolled oats. The rolled oats are made by stabilizing the whole oat groats, followed by steaming and rolling the oats to the desired thickness. This method is used for quick, regular and thick rolled oats. The cut oats they offer are the steel cut and Scottish oatmeal. These are made from the stabilized oat groat which is then cut. The Steel Cut Oats are cut into large pieces which produces a chewier texture oatmeal. The Scottish oatmeal is actually stone ground on their mills to produce a nice, creamy porridge.

Which of Bob's Red Mill's grains can be sprouted?
Any of Bob's Red Mill whole grains which have not been heated or hulled can be sprouted. This includes their wheat berries, Kamut berries, spelt berries, rye berries and triticale berries.

Are potato starch and potato flour the same product?
No. Potato starch and potato flour are not the same and cannot be interchanged in recipes. Potato starch is made from just the starch of the potato and has a neutral flavor. It is primarily used in gluten free baking and can also be used as a thickener. Potato flour is made from the whole potato and has a distinct potato flavor. It can be used as a thickener. Recipes which call for potato starch flour are referring to potato starch.

What is the protein content of Bob's Red Mill's unbleached white flour, whole wheat flour and organic hard white whole wheat flour?

  • Unbleached White Flour = 12-13% protein
  • Organic Unbleached White Flour = 11.5-12.5% protein
  • Whole Wheat Flour = 13.5% min. protein
  • Organic Whole Wheat Flour = 14% min. protein
  • Whole Wheat Pastry Flour = 13% max. protein
  • Organic Whole Wheat Pastry Flour = 12% max. protein
  • Organic Hard White Whole Wheat Flour = 13-16% protein

What is the difference between regular flour and pastry flour?
Regular flour (white or whole wheat) is milled from hard red wheat and has a higher gluten content. It is excellent for baking bread and other yeast-risen baked goods. Pastry flour (white or whole wheat) is milled from soft white wheat and has a lower gluten content. It is excellent for baked goods using baking powder or baking soda as leavening agents. It should not be used for baked goods where yeast is used.

Preserving Nutrition Through Tradition
At Bob's Red Mill, they know that you can't rush quality. That's why they manufacture their products using time-honored techniques, like grinding whole grains at cool temperatures with a traditional stone mill. This production 'secret' allows them to seal in the freshness and bring you wholesome, quality foods, just as nature intended.

Their beautiful stone grinding mills are much like the ones used during early Roman times. And to this day, their quartz millstones remain the best way to produce the finest products available. Unlike high-speed steel rollers, their stone mills ensure the most nutritious parts of the whole grain remain, so they can pack all-natural goodness right into your bag.

A Leader In Gluten Free
For over 30 years, the Bob's Red Mill family has been committed to providing the very best in Gluten Free flours, cereals, baking mixes and grains for their friends on Gluten Free diets. So you could say they know a thing or two about what it takes to make a wide variety of the best products available. You see, they thoroughly batch test every Gluten Free product in their quality control laboratory upon delivery, during production and after packaging.

To assure the integrity of all of their Gluten Free products, they adhere to a standard of no more than 19 parts per million of gluten. They've even built a separate Gluten Free packaging division complete with specialized machinery to make sure that their products maintain their purity--just as nature intended. By going to these lengths, they're able to ensure that folks with wheat allergies, celiac disease and gluten intolerance can trust that their products are safe to consume.

Milling, Testing, Packaging, Distributing All Under One Roof
They have known from the first day they opened their doors in 1978 that to make the best products possible, they'd have to be able to do it all themselves. And with their state-of-the-art milling, packaging and distribution facility located right in Milwaukie, Oregon, they're able to guarantee quality, every step of the way.

Bob's Red Mill takes great pride in handling all aspects of the production process in-house, starting with processing, washing and inspecting the grain, and ending with shipping the finished product to your door. Each product undergoes extensive quality control tests within their in-house laboratories. During this testing phase, their gluten-free offerings are segregated from their other products, and tested in special gluten-free-only 'clean room facilities.'

But don't just take it from them; you can actually see the results of all their hard work. With their special clear packaging, you get to be the final judge of the quality and freshness of their products, before you take them home.

Sourcing The Finest Products From Their Farms To Your Table
Their relationship with their product starts at the source, with the farmer who produces the grain. They maintain personal relationships with farmers from across the country and make an effort to visit their farms. Together, they ensure that they're offering the best product available, while always using best practices.

Ensuring Certified Organic, Whole Grain Goodness
They often hear the question from their customers, 'What does organic really mean?' It is, simply, a label assigned to foods that are produced without pesticides or chemical fertilizers, and that do not contain genetically modified organisms (more commonly known as GMOs). Organic food production also supports farming methods that are deemed environmentally sound. They are proud to offer one of the largest lines of organic, whole grain foods in the country. When you see the 'USDA Organic' label on their products, you'll know that to earn that label, Bob's Red Mill had to complete a rigorous certification process through the USDA's National Organic Program.

Bob Meet the Real Bob

Before you get to know about their business, you need to meet the man behind it - Bob Moore. You'll recognize his friendly face on their products and if you ever tour their mill or visit the Bob's Red Mill Whole Grain Store and Visitor's Center you might even get to meet the man himself. For over three decades, Bob has been committed to providing people everywhere with the best quality foods available.

His passion for health and belief in taking care of one another is as strong today as it was when he first started the business with his wife, Charlee, all those years ago. Bob plays a fundamental role in the daily operations of the business and his enthusiasm and 'honest-to-goodness' approach are shared with every of one his employees. It's this passion for providing the very best nutritional whole grains that has helped make them the leading name in health foods across the country.

How Bob's Red Mill Began
Bob's journey began serendipitously in the mid '60s after coming across a book about old stone-grinding flour mills. His enthusiasm was immediate and he decided to find usable stone mills, which were becoming rarer due to the domination of high-speed steel roller mills. His persistence paid off. Equipped with several sets of millstones from an old North Carolina water-powered flour mill, Bob and his wife, Charlee, began their first mill in Redding, California.

After a few years, they decided to pursue others interests and retired to Oregon City, Oregon in 1978. On an afternoon walk, Bob came across an old mill that, as luck would have it, had a big sign out front reading "for sale". In just a few short months, he was able to source a beautiful old mill that could stone grind flours and cereals for local customers. Word quickly spread and Bob's Oregon City based mill enjoyed much success until 1988 when a fire destroyed the building. Never one to back away from a challenge, Bob knew he owed it to his family of employees and loyal customers to build the business again from scratch. Rising to the challenge, he spent many years growing the business to where they are today. Their current site located in Milwaukie, Oregon is a 320,000 square foot facility covering some seventeen acres and produces thousands of products each day, all made with the same good old-fashioned techniques their customers have come to love and trust since their beginning.

A Name You Can Trust
Trust, honesty and integrity. These are the three principles their business is built on. Their packaging is a great example of this commitment: their clear bags that let you see the high quality of every one of their products. By producing the very best in whole grain foods, they're able to fulfill their commitment to help look after more and more people through better nutrition. Bob simply wouldn't have it any other way.

An Employee Owned Business
Bob's 81st birthday was particularly special. Rather than receiving gifts, he decided to give his greatest gift away - his business. Bob surprised all his employees by giving them total ownership of Bob's Red Mill through an Employee Share Ownership Program (ESOP). For those who know Bob, it's yet another example of his kind-hearted generosity. As Bob puts it "It was just the right thing to do. I have people that have worked with me for over 30 years and each and every one of them deserve this." You can rest assured that every Bob's Red Mill employee is committed to sourcing, milling, testing, packaging, labeling and selling the finest products available. After all, it is their business.

I find this to be a fantastic substitute for corn starch when I'm whipping up things for my corn sensitive pets. If you don't use much at a time I would suggest putting it into a sealed bag and storing it in the freezer just to keep it safe from moisture.
