About Coconut Secret
It all began in the Spring of 2008, with an overwhelming desire to create a low glycemic, gluten-free snack line that was truly safe for diabetics, using the purest, most organic, least processed ingredients we could find. A few years earlier both our parents were diagnosed with Diabetes, and we quickly became appalled at what was being passed off as “diabetic-safe” foods, especially in the snack category. We discovered, that oftentimes, sugar is disguised on labels in a myriad of creative technical terms. Newly invented imitation sugar substitutes are used as sweetening agents. Sugar in other forms are frequently added such as fruit juice concentrates, honey (which when heated and processed for use in manufacturing, essentially becomes sugar syrup), and the most infamous of all, “high fructose corn syrup” (HFCS), now widely known as one of the primary contributors to Diabetes and Obesity. None of these sweeteners are truly “safe”, no matter how they are purported to breakdown in the body. Coconut sugar is made by collecting the “sap” from coconut tree blossoms. Who knew?! There are specific species of coconut trees that can be “tapped” (much like maple trees are tapped in the maple syrup making process). Bamboo containers are used to collect the sap of the coconut trees right at the blossoms. When the coconut trees are tapped, they produce a continuously flowing “inflorescence” (juice or sap) that exudes from the coconut blossoms. This naturally sweet sap is very low glycemic (GI of only 35, with only 16% sucrose), raw and enzymatically alive, is an abundant source of 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH. It is then minimally evaporated for less than an hour (only to remove excess moisture), at low temperatures, never exceeding an average summer day in the tropics. The end result is a syrup-like product known as coconut “toddy”, which is then further evaporated into crystal form to produce the coconut sugar.

It think it's amazing that someone figured out a way to make a sugar replacement out of coconuts!

Its delicious but I disagree with the previous reviewer, it taste like brown sugar or date sugar it doesnt taste like maple syrup. I love maple syrup and buy maple syrup dehydrated down to maple sugar. Anyway, coconut sap sugar is about 30% less calories than cane sugar and low glycemic so I will start buying it regularly.

The Raw Coconut Crystals, taste very good , use in coffee and pancakes with coconut oil and sprinkle coconut crystals instead of syrup and butter for grandkids they like it

This is a good price for a good product. Rivals the local prices even with shipping.

Try mixing it w/ Coconut Secret's "Raw Coconut Flour" (add a little water) to form a paste. If you have a dehydrator you can make chip from the paste. The "Thinner the paste the "Less" time is needed to finish them.
NOTE: Cau. Be Very Careful to eat small amounts of the paste

These raw coconut crystals are wonderful! I use less than I would if it was using sugar.

Can anything be better than sugar? Well this is! I've used it for lemonade, hot chocolate, oat meal. I haven't baked with it yet but I plan to see how it holds up. I wish it was more in the container for less money.

I replace the sugar in my baking recipes with half Coconut Secret and half KAL Pure Stevia Extract Powder. Coconut Secret is a bit expensive so combining it with Stevia Powder is economical and tastes great. Coconut Secret is a terrific sugar substitute.

Good taste in coffee, espetially with almond milk, teste like treat! I like what its low glycemic, raw and organic. Very good product.

Excellent for my blood sugar concerns. I go from low to high blood sugar with just the slighest bit of the wrong food. I have not had to take my blood sugar in several years due to fact that I eat healthy and eat in moderation. I am 67 and have my insulin level under control with diet and right foods.

Decent sugar sub. I've used it mostly for baking, but when friends come over they like it in their coffee.
