About Coconut Secret
It all began in the Spring of 2008, with an overwhelming desire to create a low glycemic, gluten-free snack line that was truly safe for diabetics, using the purest, most organic, least processed ingredients we could find. A few years earlier both our parents were diagnosed with Diabetes, and we quickly became appalled at what was being passed off as “diabetic-safe” foods, especially in the snack category. We discovered, that oftentimes, sugar is disguised on labels in a myriad of creative technical terms. Newly invented imitation sugar substitutes are used as sweetening agents. Sugar in other forms are frequently added such as fruit juice concentrates, honey (which when heated and processed for use in manufacturing, essentially becomes sugar syrup), and the most infamous of all, “high fructose corn syrup” (HFCS), now widely known as one of the primary contributors to Diabetes and Obesity. None of these sweeteners are truly “safe”, no matter how they are purported to breakdown in the body. Coconut sugar is made by collecting the “sap” from coconut tree blossoms. Who knew?! There are specific species of coconut trees that can be “tapped” (much like maple trees are tapped in the maple syrup making process). Bamboo containers are used to collect the sap of the coconut trees right at the blossoms. When the coconut trees are tapped, they produce a continuously flowing “inflorescence” (juice or sap) that exudes from the coconut blossoms. This naturally sweet sap is very low glycemic (GI of only 35, with only 16% sucrose), raw and enzymatically alive, is an abundant source of 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH. It is then minimally evaporated for less than an hour (only to remove excess moisture), at low temperatures, never exceeding an average summer day in the tropics. The end result is a syrup-like product known as coconut “toddy”, which is then further evaporated into crystal form to produce the coconut sugar.

This has become my new go-to gluten free flour! Love the mess-free packaging and low price. I use this in everything from baked goods to a stir-in for steel cut oats and plain yogurt (makes it taste like cheesecake!).

Excellent Food! Can mix water to make it into a paste. Also, try adding some Herbs, Tomato, Coconut Vinegar/Aminos to the paste. For a sweeter side add Coconut Crystals/Nectar to the paste. If you have a dehydator, you can make chips from the paste. The "Thinner" you make them, the "Less" time is needed to finish them.
NOTE: Caution! Be Very Careful >> If eating it in the "Raw Thick Paste" form, then the more time you need to dissolve it in your mouth

This was my first time buying coconut flour. Great experience with it so far... I made some gluten-free blueberry muffins that turned out great! Everyone in my family loved them!

Great to add to baking recipes for added fiber, nutrition, and to lower carb count. When you use a lot of it in a recipe, though, you will need more liquid to compensate because it seems to absorb a lot.

So delicious. Sometimes I just eat a spoonful plain! It mixes perfectly for all of my pancakes and crepes, and I even put some into my plain yogurt. A great addition to make something smooth with a texture or to fluff it up while still keeping carbs low and fiber high.

As a gluten free customer I am amaized at all the products that are available on Luckey's site. I haven't found one thing that I couldn't find on Lucky's site yet. Thank you for the availability of different gluten free items.

Experimenting with Paleo/clean diet...some of my family members are doing the GAPs diet....this flour was a bit clumpy, but it blended well enough to make some pretty decent muffins sweetened with honey or maple syrup. It makes them very light, a bit like sponge cake, but then again the recipe called for a whole bunch of eggs as well...overall? Good substitute if you cannot use regular flour...

Great product! Coconut flour is very dense. Make sure you know the right ratio if substituting and not going directly from a recipe, because it is not 1:1 substitution from regular flour.
